One pot Cajun chicken pasta is the perfect busy weeknight dinner. This creamy tasting delicious recipe is easy to make and healthy too!
Now folks, who doesn't love a tasty one pot dinner? Well standby for an amazing made from scratch one pot cajun chicken pasta recipe!
This is a really easy to make one pot dish.
I'm using my tried and tested method to make the Cajun spice seasoning. So you might need a pestle and mortar to make that (see equipment list in the recipe card) but it's really easy!
I've used it in other popular recipes like my Cajun spiced oven baked chicken and my Cajun spiced chicken with pomegranate couscous.
The Cajun seasoned chicken, pasta and vegetables are all cooked and marinated together in a creamy tomato sauce. So you know how delicious this is going to be!
I remembered whilst making this one pot pasta just why I love my one pot recipes!
Yes there's the absolute satisfaction of cooking everything in one pot and the smells of it simmering away on the stove.
However, there's the other major advantage of just how little washing up there is to do compared to other dishes which require several different pots and pans.
I'm sure you'll agree with me too, that at the end of a busy day the last thing we all want is mountains of dishes!
Of course if you want to reduce your dishes even further, or don't have the necessary spices to hand, then you could buy Cajun Seasoning.
I really do recommend following the actual recipe though and grinding your own Cajun seasoning if you can.
Sure it's less effort to use shop bought Cajun seasoning but you miss out on all the full flavours and satisfaction from making your own.

One Pot Cajun Chicken Pasta Recipe
If you like your Cajun spice a little bit milder then reduce the amount of cayenne pepper used before you grind it to make the Cajun seasoning.
You can change up this recipe to make different variations by adding or swapping out some of the vegetables used.
Use different colours of peppers (they all work regardless of colour). Or why not swap them out for green beans. Adding them when you would have added the peppers?
Spinach could also be added for an extra veggie boost. Just add it before the end of the cooking allowing it to wilt before you portion up and serve the whole dish.

Ingredients
For The Cajun Seasoning
- ½ teaspoon caraway seeds
- ½ teaspoon cumin seeds
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- ½ teaspoon freshly ground pepper
- ½ teaspoon dried oregano or dried thyme
For The Chicken Pasta
- 700 g skinless chicken breasts cubed.
- 2 tablespoon olive oil
- 2 cloves garlic crushed
- 1 medium onion diced
- 1 medium red or green pepper sliced
- 75 g button mushrooms sliced
- 1 x 400g tins of chopped tomatoes
- 225 g whole wheat penne pasta
- 450 ml chicken stock
- 4 tablespoon low fat cream cheese
- Freshly ground salt
- 1 tablespoon freshly chopped parsley
Instructions
For The Cajun Seasoning
- Grind all the spices in a pestle and mortar or a spice grinder until a fine powder is formed.
For The Cajun Chicken Pasta
- Place the chicken cubes in a large bowl and coat them equally in the ground spices.
- Gently heat the olive oil in a large pot. Add the chicken and cook stirring until no longer pink, about 5 minutes. Remove chicken from pot using a slotted spoon.
- Add the garlic, onion and chosen pepper to the pot and sauté until tender in the chicken juices for about 3 to 4 minutes then add the mushrooms. Cook for a further 2 minutes until all the juices are absorbed.
- Add the chicken back into the pot then stir in the tomatoes, pasta, and chicken stock. Bring to the boil and then turn down to simmer for about 10 minutes until the pasta and chicken are cooked.
- Turn off the heat and stir in the cream cheese.
- Season to taste with the salt and serve the chicken in bowls garnished with the freshly chopped parsley.

I can't remember where I got this original Cajun seasoning recipe from (might have been my mum) but I've always had the caraway seeds in it and it's always worked brilliantly!

Well, you've got to love less cleanup, that's for sure. I'm not sure if I'd go so far as grinding my own spices - not that I don't agree with you about it, because whenever I have, I've always noted how much more interesting the flavors are. It's just that I'm so lazy! I love your enameled cast iron pot. It's the kind of thing that will last for generations!

Or if I'm away from home staying in a cabin or something and making this where I don't have a pestle and mortar or the available spices, then I'll just buy the seasoning. And yeah I couldn't do without my cast iron pot. It's used just about every day!
