How To Make Slow Cooker Vegetarian Sausage Casserole
All you need to do first is grill the sausages.
Whilst keeping an eye on the sausages grilling chop up and prepare the rest of the ingredients.
Then sauté the onion and garlic and add that and the rest of the ingredients to the slow cooker.
Cook on low for 4- 5 hours. Switch the slow cooker off then add the peas and allow to sit for 10 - 15 minutes.
During the sitting time cook your pasta or accompaniment of your choice.
There's no specific kind of vegetarian sausages you need to use.

Ingredients
- 3 vegetarian sausages
- 1 tablespoon olive oil
- 1 large onion finely chopped
- 2 cloves garlic crushed
- 2 carrots cut into batons
- 1 sweet potato peeled and cut into large pieces
- 400 g tin tomatoes
- 1 tablespoon tomato purée
- 100 ml vegetable stock
- 1 teaspoon dried oregano
- 100 g frozen peas
Instructions
- Grill sausages, about 15 minutes, then cut each sausage into quarters.
- While sausages are grilling prep the vegetables.
- Heat the olive oil in a frying pan and sauté the onion and garlic until soft, about 4 minutes. Then add to the slow cooker.
- Add the rest of the prepared vegetables, the sausages and tin of tomatoes to the slow cooker.
- Stir in the tomato puree, stock and oregano.
- Cook on low 4 to 5 hours until the vegetables are soft. Stir occasionally whilst cooking.
- Switch off the power, stir in the frozen peas and leave to sit for 10 – 15 minutes until the peas are cooked through.
- Serve over some whole wheat fusilli pasta.

I do check out the veggie sausages in the store but I've always assumed they were a bit bland - what a great way of using them, Neil! The weather is getting cooler here so we're definitely starting on cooking soups, stews and casseroles. Thanks so much for the inspiration.

Neil, I must confess, I've not tried vegetarian sausages. Like others, I guess I thought them bland and so so. Your veggie sausage casserole looks like the perfect recipe to introduce someone to veggie sausage. We're trying to vegge up over this way so I'll have to give this a try.

Hope you get a chance to give it a try Ron! I'm a big fan of both meat and veggie sausages, but in a world where we're being told to eat less meat for both health and environmental reasons I think it helps if we eat more of the veggie sausages and less of the meat ones.
