I do check out the veggie sausages in the store but I've always assumed they were a bit bland - what a great way of using them, Neil! The weather is getting cooler here so we're definitely starting on cooking soups, stews and casseroles. Thanks so much for the inspiration.

Yeah I know what you mean Katerina. I've had some excellent veggie sausagaes and some not so excellent. That's why I thought this would be a great way to spice them up a little!

I love a good slow cooker recipe! Even though the warmer days are coming, a slow cooker recipe is much appreciated on these busy and crazy quarantined days. Garlic and onion are a great way to boost the flavor here, and I know this casserole wouldn't last long. Thanks for the recipe, my friend!

I thought the warmer days were here David. We have been experiencing some lovely sunny days but just lately its got cold. There's been frosts again in the mornings. Back to slow cooker comfort meals it is!

You're so right, Neil! Veggie sausages are so underrated. I have to admit, I forget how much I like them, especially in a recipe like this - so full of nice veggie flavors and textures! Love how healthy it is, too!

I recommend giving them a go Jeff. Especially with a good veggie casserole, like this one.

I'll keep my eyes open for them. I love that you so often present ideas to me that are so outside of my usual vision.

Neil, I must confess, I've not tried vegetarian sausages. Like others, I guess I thought them bland and so so. Your veggie sausage casserole looks like the perfect recipe to introduce someone to veggie sausage. We're trying to vegge up over this way so I'll have to give this a try.

Hope you get a chance to give it a try Ron! I'm a big fan of both meat and veggie sausages, but in a world where we're being told to eat less meat for both health and environmental reasons I think it helps if we eat more of the veggie sausages and less of the meat ones.
