    Strawberry beetroot smoothie is made in just minutes from only three ingredients. It packs all of your daily recommended vitamin C into one glass.

    There’s many reasons why I wanted to make this strawberry beetroot smoothie.

    For a start vitamin c. It’s important to ensure that you get plenty of support for your immune system all year round. Particularly in winter.

    Secondly, well because it’s been ages since I made a smoothie and I’ve been wanting to try the combination of strawberries and beetroot together for ages!

    So folks, picture last Saturday, if you will........

    I’m in the kitchen with packets of cooked beetroot, strawberries, bananas, vegan yogurt, almond milk, date nectar and stevia.

    I’m ready for a good few hours of recipe experimentation to get this strawberry beetroot smoothie right.

    A handful of chopped strawberries, 2 chopped cooked beetroots and a quarter of the carton of yogurt go into the blender.

    I shout upstairs to my other half “Can you come and taste this please”.

    I turn round a slit second later where Lynne is already standing. Spoon in hand. Ready.

    One spoonful of the alluring frothy liquid and Lynne announces “Yeah that’s great, nothing more needed there. When can I have some”?

    And hereby I created this delicious beetroot and strawberry smoothie.

    My easiest, simplest smoothie recipe to date.

    And then I began to get paranoid. I felt like a fraud.

    Surely I couldn’t publish a recipe with only 3 ingredients? I mean that’s like cheating.

    This strawberry beetroot smoothie was meant to be an elaborate fusion of a whole number of different ingredients!!

    But then it struck me. That’s just what it is. Isn’t it?

    I’d accomplished exactly what I’d set out to achieve. Plus more.

    • Minimum ingredients. Minimum effort. Maximum Vitamin C.
    • A unique and perfectly fusioned, simple, quick healthy strawberry beetroot smoothie.

    I suppose sometimes simple is best.

    Equipment

    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Measuring jug
    • Blender

    Ingredients

    • 200 g chopped strawberries
    • 120 g chopped cooked beetroot
    • 250 ml plain vegan yogurt I used Alpro
    Metric - US Customary

    Instructions

    • Place all ingredients into a blender and blend until smooth.
    • Serve immediately.
    Prevent your screen from going dark

    Notes

    May be sweetened to your preference with honey, agave nectar or similar sweetener.

      Wow Neil - you nailed it on the first try! And with only 3 ingredients - one of which is my all time favorite - beets!!! LOVE this! I so need to try this as I have beets and strawberries and yogurt - though it isn't vegan!

        I haven't tried it yet with any other yogurts, other than the vegan one I had, which is sweetened. But I've had someone else try this out with plain yogurt and a little honey to taste. They said it worked out just great.

      Wow, what a stunning colour that smoothie is! I just love adding beetroot to smoothies (usually my green smoothies) as it adds a nice earthy flavour to it.

        I thought about adding a sweetener to this, but then that would have taken away that "earthy" flavour, and then the authenticity too.

      I love adding beet juice to brownie mix because you never know its there. I never though my to add it to a smoothie. I'm going to have to give this a try.

      Healthy, easy and just 3 ingredients - this makes this recipe a winner in my book! I love smoothies for breakfast or afternoon snack! Never tried adding a beetroot to smoothie, but sounds like a great idea!

        I'm jealous that you can have a smoothie for an afternoon snack though. I'd love to be able to do that, but I can't see my work being too happy at me chopping and then blending away in the kitchen. The blender noise would annoy the colleagues I work with, who might not be too happy. 😆

      I LOVE BEETROOT BUT NEVER THOUGHT OF PUTTING IT IN MY SMOOTHIE. TRIED THIS AND LOVED IT. SIMPLE BUT TASTY, NO ENDLESS LIST OF INGREDIENTS. MORE RECIPES LIKE THIS PLEASE
