    Broccoli and Potato Soup

    Broccoli and potato soup. A delicious and easy to make cheesy tasting hug in a bowl. The perfect comfort food for winter!

    Well folks with winter upon us now, how about a really quick and easy broccoli and potato soup to give us all a lift?

    This soup is just the ticket to help brighten up the darker colder days.

    Made with easy to get ingredients it's delicious and filling too.

    Another bonus of my broccoli potato soup is that it's relatively healthy at only 300 calories per serving.

    The main reason for this being a low calorie soup is that its made with no cream!

    I used to love any soups that were made with cream. Unfortunately my waistline didn't!

    In fact I pretty much used to devour anything with cream in. Cakes, creamy sauces and desserts were all my favourites.

    Nowadays I allow myself to get my cream fix from my favourite dessert, cheesecake.

    When I began cooking everything from scratch and loosing weight I learnt that you can also still enjoy creamy soups.

    You just need to get that creamy consistency by substituting cream with other ingredients!

    How To Make This Broccoli Potato Soup Healthy And Creamy Without Cream

    My creamless broccoli and potato soup is given a creamy consistency by adding potatoes into the recipe.

    When you puree the soup, these potatoes help to thicken the liquid.

    Then re-heating and adding in some low fat soft cheese gives it its delicious cheesy taste.

    All that's left is to top it with a little grated cheddar cheese and then stir that in.

    Then you've got the ultimate soup to enjoy on a cold day!

    How To Make Broccoli And Potato Soup

    1. Sauté the onion and garlic until soft.
    2. Add broccoli, potatoes and stock.
    3. Simmer until vegetables are softened.
    4. Blitz the soup in a blender or food processor and puree until smooth.
    5. Return to the pan, reheat then stir in soft cheese.
    6. Season to taste and then serve in bowls topped with the cheddar cheese and with some fresh crusty bread.

    Your Questions About This Broccoli Potato Soup

    1. What kind of potatoes work best in this soup? Just use ordinary cheap white potatoes. They need to be easy and quick to cook and mash to make the creamy consistency.
    2. Do I have to use Broccoli? No you could easily use cauliflower instead.
    3. Is this broccoli potato soup gluten free? Yes, just be sure to use gluten free vegetable stock.
    4. Can this soup be frozen? Yes. Allow it to defrost thoroughly before re-heating on your stove or in your microwave.
    5. Can I make this a chunky potato broccoli soup? Yes to do this I just remove the cooked potatoes before blitzing the rest of the soup mixture (after step 3 below). Then add them back in (step 5 below).

    Equipment

    • Saucepans
    • Measuring spoons
    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Measuring jug
    • Wooden spoon

    Ingredients

    • 1 tablespoon olive oil
    • 1 large onion chopped
    • 2 cloves garlic crushed
    • 250 g broccoli florets
    • 300 g white potatoes peeled and chopped
    • 1 L vegetable stock
    • 200 g low fat soft cheese
    • Freshly grated salt and pepper
    • A little grated cheddar cheese for garnish
    Metric - US Customary

    Instructions

    • Gently heat the olive oil in a medium sized saucepan.
    • Add the onion and garlic and sauté for about 5 minutes until soft, stirring to avoid burning or sticking to the saucepan.
    • Add the broccoli florets, potatoes, and vegetable stock. Bring to the boil and then simmer for approximately 15 – 20 minutes.
    • Blitz the soup in a blender or a food processor.
    • Return the soup to the pan and bring it back to the boil and then turn down to simmer and then stir in the soft cheese first until combined.
    • Season to taste and then serve in bowls topped with the cheddar cheese and with some fresh crusty bread.

      Yes! I love creamy soups. Sometimes I'll go all in knowing that it's not the healthiest of soups. Other times, though, I like to find shortcuts to get that creamy texture without adding cream. The low-fat cream cheese trick is one we use here, too! I love the potato + broccoli flavors here. Laura was just saying it's time to get back to making a pot of soup each weekend for the following week's lunches. I'll have to put this one on the menu!

        Excellent David. I know that you folks will love this creamless broccoli and potato soup. And there's nothing better for lunches especially as the temperature drops. It's my favourite soup at the moment with some hunks of homemade bread.

      Actually, most of the times, I don't add cream into my soup either - instead, I prefer a little bit of butter or cream cheese. But I've been bad this fall using cream quite often ๐Ÿ™‚ I certainly need to change my game which won't be too hard with such a delicious and earthy combination like this. And with the cheese addition? Yes please!

      Neil - Im totally with you on the cream soups - I do love them, but I'll happily save my "cream calories" for something I can't re-create otherwise. So this creamy soup with no cream is perfect for my family. Especially now that we are in soup season - it's been unseasonably cold here, so soup is on the table pretty often right now!       This is a beautiful soup and I wish I could enjoy it now. Weโ€™ve had no electricity for 5 days now, and I can cook on my gas stove, but I have no refrigerator in which to store the leftovers! Iโ€™ve always loved pureed soups, and Iโ€™m not against cream or various milk, but I also used to add a chunk of tofu to add creaminess to soups. It works really well.

        Wow. Sorry to hear you've had no electricity now for 5 days Mimi. What a nightmare. Yes I guess you could cook this on a gas stove but as you say where would you store the leftovers? I haven't tried adding tofu to add creaminess to soups. I'll need to try that. Thanks!
