    This creamy spinach soup is a healthy, nutritious recipe made with fresh or frozen spinach. It's naturally creamy without any added cream and packed with flavour!

    This creamy spinach soup is a simple, wholesome recipe that's full of flavour and goodness.

    With spinach coming into season, I thought it was the perfect time to share another favourite recipe using this vibrant green vegetable.

    But don’t worry, it’s just as delicious made with frozen spinach, so you can enjoy this easy spinach soup it all year round.

    It blends into a velvety, natural cream of spinach soup, but without any added cream! And it's packed with healthy vitamins and minerals.

    This healthy spinach soup recipe is quick to make and full of fresh flavours and it's low in calories too.

    It's perfect for a light lunch or easy weeknight dinner.

    Plus, it's vegetarian, can easily be made vegan, and freezes too. Therefore perfect for healthy meal prep!

    Soup Ingredients

    • Olive Oil - just use ordinary cooking olive oil.
    • Onion
    • Garlic Cloves
    • White Potato
    • Vegetable Stock / Vegetable Broth
    • Spinach - I've used baby spinach. Any kind will do.
    • Skimmed Milk - you can use full fat / whole milk but it will alter the nutritional label.
    • Low-fat Soft Cheese - you can use full fat but it will alter the nutritional label.
    • Freshly Ground Salt and Black Pepper
    • Freshly Ground Nutmeg To Season (Optional)
    • Croutons (Optional)

    Spinach Soup Step By Step Instructions

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy creamy spinach soup recipe:

    Step 1

    • Heat the oil in a large pan and sauté the onion and garlic until soft.
    Diced potato added to the sautéd onion and garlic in the saucepan.

    Step 2

    • Stir in the diced potato and cook.
    Vegetable stock added to the pan of potatoes, onion and garlic.

    Step 3

    • Add the vegetable stock, bring it to the boil and allow to simmer until the potatoes have softened.
    Spinach added to the soup pot and broken down by simmering.

    Step 4

    • Add the spinach in batches and cook, simmering to allow the spinach to break down. Then remove the soup from the heat.

    • Blitz the soup in a blender or food processor.
    Spinach soup returned to pan from blender. Skimmed milk and cream cheese stirred in until combined.

    Step 6

    • Return the soup to the pan and bring it back to the boil and then turn down to simmer, stir in the skimmed milk and low-fat cream cheese until combined.

    • Season to taste and add desired amount of nutmeg.

    How To Make Croutons For Soup

    It's incredibly easy to make croutons for soup. You can use this recipe to add croutons to any soup recipe.

    Crouton Ingredients

    • 1 slice of wholemeal / wholegrain bread
    • 1 tablespoon olive oil - just use ordinary cooking olive oil

    Croutons Step By Step Instructions

    Cubed wholemeal bread in a small bowl coated with olive oil.

    Step 1

    • Pre-heat oven to 180C Fan.
    • Cut the bread into cubes and roll them in the olive oil.

    • Lay the olive oil soaked cubes on a baking tray.
    Roasted croutons on a baking tray.

    Step 3

    • Roast the croutons in the oven for about 7-8 minutes then remove once toasted.

    Ingredients

    • 1 tablespoon olive oil
    • 1 large onion diced
    • 2 cloves garlic crushed
    • 1 medium sized white potato peeled and diced
    • 750 ml vegetable stock
    • 300 g baby spinach chopped
    • 250 ml skimmed milk
    • 100 g low fat soft cheese
    • Salt and Freshly Ground Black Pepper
    • Freshly ground nutmeg to season Optional
    • Croutons Optional

    Instructions

    • Heat the oil in a pan and sauté the onion and garlic for 2 – 3 minutes until soft.
    • Add the diced potato and cook for about 5 minutes, stirring.
    • Add the vegetable stock, bring it to the boil and allow to simmer for 20 minutes until the potatoes have softened.
    • Add the spinach in batches and cook, simmering for a further 10 minutes to allow the spinach to break down. Then remove the soup from the heat.
    • Blitz the soup in a blender or food processor.
    • Return the soup to the pan and bring it back to the boil and then turn down to simmer, stir in the skimmed milk and low-fat cream cheese until combined.
    • Season to taste and add desired amount of nutmeg.
    • Serve topped with croutons

      What a gorgeous color, Neil. And the taste must be lovely. Using a soft cheese in lieu of cream is a pretty common approach in Italian cookery and I love it. I bet this would be delicious made with a chunk of taleggio, for example.
