- Olive Oil - just use ordinary cooking olive oil.
- Onion
- Garlic Cloves
- White Potato
- Vegetable Stock / Vegetable Broth
- Spinach - I've used baby spinach. Any kind will do.
- Skimmed Milk - you can use full fat / whole milk but it will alter the nutritional label.
- Low-fat Soft Cheese - you can use full fat but it will alter the nutritional label.
- Freshly Ground Salt and Black Pepper
- Freshly Ground Nutmeg To Season (Optional)
- Croutons (Optional)

Spinach Soup Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy creamy spinach soup recipe:
Step 1
- Heat the oil in a large pan and sauté the onion and garlic until soft.
Step 2
- Stir in the diced potato and cook.
Step 3
- Add the vegetable stock, bring it to the boil and allow to simmer until the potatoes have softened.
Step 4
- Add the spinach in batches and cook, simmering to allow the spinach to break down. Then remove the soup from the heat.
Step 5
- Blitz the soup in a blender or food processor.
Step 6
- Return the soup to the pan and bring it back to the boil and then turn down to simmer, stir in the skimmed milk and low-fat cream cheese until combined.
Step 7
- Season to taste and add desired amount of nutmeg.

It's incredibly easy to make croutons for soup. You can use this recipe to add croutons to any soup recipe.
Crouton Ingredients
- 1 slice of wholemeal / wholegrain bread
- 1 tablespoon olive oil - just use ordinary cooking olive oil
Croutons Step By Step Instructions
Step 1
- Pre-heat oven to 180C Fan.
- Cut the bread into cubes and roll them in the olive oil.
Step 2
- Lay the olive oil soaked cubes on a baking tray.
Step 3
- Roast the croutons in the oven for about 7-8 minutes then remove once toasted.

- 1 large onion diced
- 2 cloves garlic crushed
- 1 medium sized white potato peeled and diced
- 750 ml vegetable stock
- 300 g baby spinach chopped
- 250 ml skimmed milk
- 100 g low fat soft cheese

- Heat the oil in a pan and sauté the onion and garlic for 2 – 3 minutes until soft.
- Add the diced potato and cook for about 5 minutes, stirring.
- Add the vegetable stock, bring it to the boil and allow to simmer for 20 minutes until the potatoes have softened.
- Add the spinach in batches and cook, simmering for a further 10 minutes to allow the spinach to break down. Then remove the soup from the heat.

- Return the soup to the pan and bring it back to the boil and then turn down to simmer, stir in the skimmed milk and low-fat cream cheese until combined.
