    One pot sausage pasta is a simple and healthy weeknight dinner recipe. A delicious tomato and vegetable combo that's a perfect quick family meal!

    Folks, its easy recipes like this one pot sausage pasta that I love to create the most.

    I mean not only are one pot recipes timesavers but there's less washing up.

    Plus, they not only save on the washing up but they save on the pennies too and this sausage pasta is a fantastic budget meal!

    This one pot sausage pasta recipe is similar to my chicken sausage casserole but here I've removed the sausage skins and combined the minced chicken meat in with all the vegetables. It saves having to make your own minced chicken!

    You can easily make this healthy sausage pasta recipe in a skillet as a one skillet meal too.

    The result is a delicious combination of minced sausage, onion, garlic, pepper and mushrooms all in a rich tomato sauce. Yum!

    This is a wonderfully filling sausage pasta recipe that you don't need to add anything to.

    Even the pasta doesn't need to be cooked seperately. It's all done in that one pot.

    You can use pork or beef sausages in this pasta recipe and that will give you different combinations of flavours that you could try.

    My other half and I love our chicken sausages though. That's why I used them. Also eating those helps to keep our consumption of red meat to a minimum.

    Whilst chicken sausages are lower in calories than pork or beef sausages, try and get ones that have a lower fat and salt content too. If you can.

    Unlike other one pot sausage pasta recipes out there this is a low fat sausage recipe as doesn't need any additional cheese to give it flavour!

    It only takes 15 minutes to prep and then 30 minutes to cook this fantastic easy only pot pasta recipe. So you can have this on your dinner table in no time.

    In fact it could take less time than that if you're a dab hand with your prep.

    This one pot sausage pasta recipe is one of those meals that requires little thought. Just head to the supermarket straight after work and get your ingredients to make it.

    Let me break down for you how to make this one post sausage pasta into 5 simple stages below.

    I always think it's easier to envisage the stages of making a recipe. It makes it less complicated don't you think?

    In the recipe I've noted that the chilli is optional.

    I do recommend making this one pot sausage pasta with the chilli.

    However you might want to leave that out of this one-pot recipe if you're serving this to young kids as well. So that the whole family will enjoy it.

    Ingredients

    • Olive Oil
    • Garlic Clove
    • Onion
    • Red Or Green Bell Peppers
    • Button Mushrooms
    • Chicken Sausages
    • Chilli Powder
    • Dried Oregano
    • 2 Tins Chopped Tomatoes
    • Whole Wheat Penne Pasta
    • Black Pepper (optional)

    Substitutions

    • Olive Oil - use ordinary olive oil for cooking. Not extra virgin olive oil.
    • Garlic Clove - you could use a little garlic powder or garlic paste instead. You can use more garlic cloves if you want it more garlicky.
    • Onion
    • Red Or Green Bell Peppers - you can use any colour of bell peppers.
    • Button Mushrooms - you can use any kind of fresh mushrooms, just chop them as small as button mushrooms.
    • Chicken Sausages - equally as healthy you could use turkey sausage instead. Or a smoked sausage to vary the flavour.
    • Chilli Powder - use red pepper flakes instead.
    • Dried Oregano - use Italian seasoning instead.
    • 2 Tins Chopped Tomatoes - use any kind of chopped tinned tomatoes. I just use supermarket own brand ones.
    • Whole Wheat Penne Pasta - I use whole wheat so the recipe is a healthy sausage pasta. You can use an ordinary pasta of your choice though.
    • Black Pepper - this is optional as usually I find the dish doesn't require seasoning.

    • One-pot meals like this are easy and quick to make and make for an easy weeknight dinner option.
    • Chicken sausages are used which are lower in fat than normal meat sausages.
    • Kids love sausages so this is a great way to get them to eat some healthy veggies.
    • Other one-pot sausage pasta recipes tend to use heavy cream to make it creamy. This one-pot pasta recipe doesn't. So it's much healthier!

    How To Make Sausage Pasta

    Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make this one-pot dinner:

    1. Using the ingredients list, prepare all your ingredients first.
    2. Next, sauté all of your vegetables in a large casserole pot or deep skillet.
    3. Add and cook your chicken sausage meat in with the vegetables breaking it down using a spoon.
    4. Stir in the spices and tomatoes to create that rich tomato sauce.
    5. Finally the pasta goes in and it's cooked until just tender (al dente).

    Variations Of This Healthy Sausage Pasta Recipe

    • Next time why not use different varieties of sausage (might change nutritional content)? Make an Italian sausage pasta by using Italian sausages!
    • You could sprinkle a little grated cheese over the top of the cooked sausage pasta and grill it making this a sausage pasta bake recipe.
    • Stir in some low fat cream cheese at the end of cooking to make a more creamy sauce.

    You can freeze any sausage pasta leftovers. Or you can easily reheat them for lunch the next day in your microwave.

      Ingredients

      • 2 tablespoon olive oil
      • 1 clove garlic crushed
      • 1 medium onion chopped
      • 1 medium red or green pepper sliced
      • 75 g button mushrooms sliced
      • 340 g chicken sausages outer skin removed
      • ½ teaspoon chilli powder*
      • ¼ teaspoon dried oregano
      • 2 x 400g tins of chopped tomatoes
      • 225 g whole wheat penne pasta
      Metric - US Customary

      Instructions

      • Gently heat the olive oil in a large pot. Add the garlic, onion, chosen pepper and sauté until tender for about 3 to 4 minutes then add the mushrooms. Cook for a further 2 minutes.
      • Add the chicken sausage meat, combine and break the meat down with a spoon and cook together with the vegetables until no longer pink. About 5 minutes.
      • Stir in the chilli powder, oregano and then add the chopped tomatoes. Combine well together and bring everything to the boil.
      • Add the penne pasta, stir well together again. Reduce the heat to a gently simmer, cover the pot and cook for 15 minutes until the pasta is tender. Be sure to check and stir whilst the pasta is cooking.

        Oh boy, this looks and sounds beautiful! The combination of all these veggies, mushrooms, sausage, and pasta is so hearty and delicious. Agreed on that you don't need to add anything else...but I won't be able to resist from adding some toasted pine nuts or even a dollop of soft cheese.

        One-pot dishes are definitely what the menu in our house calls for. As you say, who can argue with less washing up! I've made one-pot sausage pasta meals before, but I've never put mushrooms or peppers with them. I like that, some added flavour and healthy elements!

          Yes you can pretty much put any veg you like in this. If you didn't or couldn't get peppers or mushrooms, forzen peas and sweetcorn would do just fine.

        I love a one-pot meal like this, Neil! And Iโ€™m totally with you on the chicken sausages! I buy them all the time! I donโ€™t even announce a dish as chicken sausage to my family, I just let them know itโ€™s โ€œsausageโ€. Works for me, and healthier for all!

          I always used to boil my pasta seperately too Kankana. Then one day I thought I'd try it all in the same pot and it worked out great. As long as there's enough liquid in the same pot the pasta will cook. It absorbs the tomato sauce flavours too. ๐Ÿ™‚
