    Festive nut roast is the perfect easy to make vegetarian option for your Christmas table. Served as a main or a side dish this delicious Christmas nut roast recipe is packed with flavour.

    There are many nut roast recipes for Christmas out there but as vegetarian recipes go, this one is tried and tested. And a favourite amongst my vegetarian friends!

    Easy to make and inexpensive too this Christmas nut roast will satisfy any non meat eaters.

    Even meat eaters will love this filling tasty satisfying dish. We both love this nut roast even though we're not vegetarian ourselves. 

    This dish is excellent served with lots of cranberry sauce.  

    It's perfect for all year round too!

    This festive nut roast recipe is both rich and earthy.

    It goes perfectly with all of the usual trimmings and side dishes you would traditionally find on a Christmas dinner table.

    If you're entertaining vegetarian guests this Christmas, this vegetarian festive nut roast can easily be served alongside your traditional turkey dinner.

    It's not going to take you an age to make either. It can easily be made the day before and reheated.

    When it comes to choosing what kind of nuts to use for your Christmas nut roast the choice is yours.

    You can easily vary that important ingredient to suit taste and also to change up the flavours of the recipe so it doesn't always taste the same.

    In my version I simply bought a packet of unsalted assorted nuts from my local supermarket but all kinds of nuts, including chestnuts if you wanted to make this even more festive go perfectly.

    To save yourself even more time and lesson the stress on Christmas day you can bake your nut roast in advance and freeze it too. Just allow it to defrost before reheating it in your oven.

    My delicious recipe makes two nut roast loaves so you depending on how many you are serving it to or if you're just using it as a side you might not need it all.

    Ingredients

    • Cooking Oil Spray
    • Assorted Nuts
    • Sunflower Oil
    • Onion
    • Garlic Cloves
    • Spinach
    • Plain / All Purpose Flour
    • Wholemeal Breadcrumbs
    • Carrot
    • Tinned Chopped Tomatoes
    • Egg
    • Chilli Flakes
    • Dried Cranberries
    • Parsley
    • Freshly Grated Salt and Ground Black Pepper

    How To Make Christmas Nut Roast

    Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make this Christmas nut roast recipe:

    1. Preheat oven to 180 degrees FAN.

    2. Blitz mixed nuts, oil, onion, garlic, and spinach in a food processor until well combined.

    3. Empty processor contents into a large mixing bowl and stir in all the other ingredients until well combined too.

    4. Use the cooking oil spray / a little sunflower oil / olive oil to lightly grease 2 loaf tins and then line them with greaseproof / parchement paper.

    5. Empty the mixture into the loaf tins. Press down well. Smooth top.

    6. Place in the oven for 45 minutes (cooking times may vary depending on your oven) until firm and top is browned but not burnt.

    7. Turn out loaves onto a chopping board. Carve into slices.

    8. Serve warm with cranberry sauce and seasonal vegetables.

    Substitutions

    • Cooking Oil Spray - to grease the pans. Or wipe a little olive oil or sunflower oil around them instead.
    • Assorted Nuts - I use a bag of assorted nuts from the supermarket. You'll need to blitz them in your food processor first until finely chopped.
    • Sunflower Oil
    • Onion
    • Garlic Cloves
    • Spinach
    • Plain / All Purpose Flour
    • Wholemeal Breadcrumbs - I just blitz some stale wholemeal bread in my food processor.
    • Carrot
    • Tinned Chopped Tomatoes
    • Egg - to make this a vegan Christmas nut roast substitute with a vegan flax egg binding alternative. In the comments below you'll see this has already been tried and tested and it works.
    • Chilli Flakes - you can leave out if you don't want a little spice in the roast.
    • Dried Cranberries - recommended to not leave out!
    • Parsley - I use fresh curly parsley. Ordinary flat leaf parsley is fine or use a teaspoon dried oregano instead.
    • Freshly Grated Salt and Ground Black Pepper

    Can You Freeze A Nut Roast?

    This vegetarian Christmas roast can be made ahead and frozen. You can either freeze it cooked or uncooked and leave it in the loaf tins.

    As I usually need my loaf tins for other baking I prefer to cook this simple nut roast recipe and then freeze it.

    Defrost it overnight and reheat it in your oven for about 15 minutes.

    Ingredients

    • Cooking oil spray
    • 350 g assorted nuts.
    • 60 ml sunflower oil
    • 1 large onion chopped
    • 2 garlic cloves crushed
    • 180 g spinach chopped
    • 50 g plain flour
    • 50 g wholemeal breadcrumbs
    • 1 large carrot peeled and grated
    • 400 g can chopped tinned tomatoes
    • 1 egg beaten
    • 1 teaspoon of chilli flakes
    • 50 g dried cranberries
    • 2 tablespoon curly parsley chopped
    • Freshly grated salt and pepper
    Metric - US Customary

    Instructions

    • Preheat oven to 180 degrees.
    • Place nuts*, oil, onion, garlic, and spinach in a food processor. Blitz until well combined.
    • Empty processor contents into a large mixing bowl and stir in all the other ingredients until well combined too.
    • Using the cooking oil spray, lightly spray 2 loaf tins and then line them with greaseproof paper.
    • Empty the nut roast mixture into the loaf tins and press down to ensure tins are filled to the corners and smooth out the top with a palette knife.
    • Place in the oven for 45 minutes until firm and top is browned but not burnt
    • Turn out loaves onto a chopping board to carve up slices.
    • Serve warm with cranberry sauce.

    *if your assorted nuts are still whole you might want to blitz them in your food processor first until they are chopped more finely.

      I only tried a nut roast first time ever last holidays. Now, I am not a person who doesn't eat meat for any reason (I just don't eat it often), but that roast was so delicious and much better than many meat recipes! This variation looks and sounds so delicious, and served with some cranberry sauce - also absolutely festive!

      What a fun idea! I have to admit that I've never had a nut roast before, but I do love nuts...so it stands to reason that I would probably enjoy a nut roast, too. The additional ingredients and seasonings in there just scream holidays to me! We typically do a beef tenderloin for Christmas dinner, but I could see this one showing up on a cold January day for sure. Yum!

      I haven’t seen anything like this since my old hippy days! They were so popular back then, along with everything buckwheat groats., which I probably still don’t like. But I am intrigued by your nut roast, and I love the addition of cranberries!

      Neil. -- Just wanted to let you know my daughter and I made this for Christmas dinner as a vegan option (we used a flax egg) and it was outstanding! It has so much flavor, and for my tastes, it is preferable to other meatless options. The next day we sautéed some leftover slices in a bit of vegetable oil for lunch - so good! Again, thanks for the recipe, we are Nut Loaf fans!
