This is the basic pasta dish I use.
It's a great low cost but good quality baking and roasting dish.
It's perfect for lasagne, side dishes and desserts. It's dishwasher, freezer and oven safe too.
Tips For Making This Honey Mustard Chicken Pasta Bake
- I used farfalle pasta but you could also use other kinds you may have to hand like rigatoni.
- Always cook your pasta until its al dente (cooked so as to be still firm when bitten). It finishes its cooking baking in the oven.
- Leftover chicken from the Sunday roast or shredded chicken are also fine to use.
- I used low fat cheddar cheese for the cheese topping. You could always use other kinds of cheese, like mozzarella.
- You can keep any leftovers of this chicken pasta bake covered, in the fridge for 2 - 3 days.
- You can freeze leftover chicken pasta bake. Just let it cook completely first then cut it into portions and freeze in separate containers.
- It's possible to eat this pasta bake cold or if you want to re-heat it then do so in the microwave. If taking out of the freezer, make sure it's thoroughly defrosted first.

Equipment
Ingredients
- 200 g farfalle pasta
- 295 g can condensed cream of mushroom soup
- 200 g cooked chicken cut into small bite sized chunks*
- 120 g frozen peas
- 1 tablespoon Dijon mustard
- 2 teaspoon honey
- Freshly ground salt and pepper
- 80 g grated low fat cheddar cheese
Instructions
- Pre-heat oven to 180C Fan
- Bring a pan of salted water to the boil, stir in the pasta and return to the boil. Turn down to simmer for 8 minutes.
- Meanwhile, in a large sized saucepan heat the condensed soup then stir in the chicken, peas, mustard and honey. Cook gently until heated through.
- Drain the pasta and add it to the large saucepan. Stir well. Season to taste.
- Pour the chicken pasta mixture into a casserole dish. Top with the grated cheddar cheese and bake for about 15 minutes until the cheese has melted on top and is golden coloured.
- Serve with extra vegetables or a mixed leaf salad.

And Ron makes an interesting point above about gaining weight - I never thought about it, but he's probably right. We're totally self-confined to the house here, and we're going bonkers! Thanks David. I thought that this would be an appropriate meal for now that hopefully everyone can still get the ingredients to make. People usually have pasta in their cupboards and chicken is easy to get. The honey mustard flavours are easy to produce. Yes we are also mostly confined to the house. I'll need to start running outside again now that the gym is closed. Hopefully the temperature will rise soon. Take care over there too!!

Thanks for this recipe, Neil. I'm definitely going to use it. I regularly buy rotisserie chickens, because I love having leftover chicken on-hand to make quick dishes out of. What's more, I usually also make a crude stock from the carcass, and lately I've been making a mushroom soup out of the stock! I could quite easily make a condensed version, and use it as the base for this bake. Thanks!

I've never made a condensed soup before, but here's what I'm thinking: if you use a crude, homemade stock with just lots of bones and not too much water, you wind up with something that seriously gels when refrigerated. I do this all the time, and then dilute that gel and flavor it with a chicken reduction paste. (In other words, it's like rehydrating bouillon with a gelled stock and water, instead of just water). It makes a seriously hearty mushroom soup. I'm thinking there must be ways to start like that, and wind up with a condensed soup pretty easily. I'll have to research it.
