Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy slow cooker curry recipe:
Step 1
- Place all the ingredients except the cornflour and coriander into your slow cooker dish. Stir. Cover and place in the fridge ideally overnight or for at least 6 hours.
Step 2
- Once marinated cook on low for 4 – 5 hours or high for 3 hours until cooked through.
Step 3
- In the last hour of cooking check the sauce. If required to be thickened stir in the cornflour mixture.
Step 4
- Season to taste and serve with the coriander scattered over.
📖 Substitutions
- Onion - use a brown onion.
- Ginger and Garlic Paste - for convenience I use a shop bought paste. You could make your own paste or use a tablespoon crushed garlic and a tablespoon finely chopped ginger instead.
- Chicken Breasts - I use boneless, skinless chicken breasts. It's also possible to use chicken thighs too.
- Light Coconut Milk - you could use full fat coconut milk. This will make the nutritional label invalid though.
- Mild Curry Powder - it's possible to use a mixture of your own spices but for convenience this easy chicken curry is made using curry powder.
- Chicken Stock Cube - adds extra chicken flavour to the sauce.
- Tomato Puree - helps to thicken up the sauce.
- Red Chilli - I only use 1 deseeded and finely chopped red chilli. You could add more or less depending on how spicy you want your curry.
- Cornflour - used to thicken the sauce. You could use plain flour instead.
- Freshly Ground Salt and Black Pepper
- Fresh Coriander (Fresh Cilantro)

yes I like to use light coconut milk in my curries too. I use thighs rather than breasts as i feel they have more flavour but hubby is very fond of breasts π So occasionally I make him a dish with chicken breasts. Food is wonderfully subjective isn't it?
