Ever since I discovered what Bircher muesli is I've been obsessed with creating lots of breakfast recipes using that unique formula of soaking oats overnight in the fridge.
I mean OK so the original Bircher muesli was soaked overnight with water and lemon juice, and then eaten with yoghurt. Plus it was made with oats too and this one is made with quinoa.
Folks I know that once you've tasted this easy overnight quinoa breakfast recipe you'll forgive me for not quite keeping to that original recipe!
To make this quinoa bircher muesli recipe just soak cold cooked quinoa (details below how to cook quinoa) in a bowl with Greek yogurt and skimmed milk.
Add to that quinoa yogurt mixture all of the rest of the ingredients, stir them together well and place the bowl, covered into the fridge overnight.
The result is an incredibly simple, creamy and fresh tasting overnight quinoa breakfast.
How To Cook Quinoa for your Quinoa Bircher Muesli
- Rinse 60g quinoa in cold water.
- Place the rinsed quinoa in a small saucepan and cover with 300ml cold water.
- Turn on the heat, bring the quinoa to a boil and then turn down to simmer for about 15 minutes until the water has evaporated and the quinoa has doubled in size.
- Allow to cool.

Ingredients
Bircher Muesli: -
- 60 g cooked quinoa
- 150 ml Greek yogurt 0% fat
- 30 ml skimmed milk
- 1 small apple grated
- 1 small banana sliced
- 1 tablespoon chia seeds
- 1 tablespoon sunflower seeds
- ยฝ teaspoon vanilla essence
- ยฝ teaspoon cinnamon
- 1 tablespoon honey
Toppings: -
- Sliced banana
- Chopped fresh strawberries
Instructions
Bircher Muesli: -
- Place all the ingredients in a bowl and mix well to combine everything together. Ensure everything is well coated in the liquid.
- Cover and place in the fridge overnight.
- Take bowl out of the fridge in the morning. Remove contents to 2 serving bowls and top with suggested toppings or choose your own!

I had to look up "bircher oatmeal," because I had no idea what you were talking about. Now that I understand, I realize that I've seen version of these here and there, but didn't know it by that name. I love the idea of using quinoa. I love quinoa. I'll bet it's delicious!

Like Jeff, I had to google 'bircher muesli' to get a better understanding...but I get it now! This sounds like a delicious breakfast, and I love that it can be prepped the day before. I'm all about tasty breakfasts, and I like mixing up the routine, too. I'll have to put this one on my agenda soon! The fruits on top look awesome!

Interesting, indeed! I've never treated quinoa this way. It looks that once cooked, chilled, and mixed with other ingredients, it soaks up the liquid and works similarly to chia seeds. Also, I've never used quinoa in sweet recipes either. And I think this autumn combo of apples, cinnamon, and quinoa is a good start.
