🔪 Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy shredded beetroot and goat's cheese salad recipe:
Step 1
- Place all the honey mustard ingredients into a jar and shake well. Season to taste.
Step 2
- Place the spinach leaves, grated beetroot and toasted walnuts in a large mixing bowl.
Step 3
- Toss honey mustard dressing with the salad until well coated.
Step 4
- Divide the salad in two, sprinkle over the crumbled goat’s cheese and serve. Season to taste if necessary.
📖 Substitutions
- Baby Spinach Leaves - although I use spinach solely here you could use a mixed bag of spinach and lettuce leaves.
- Beetroot - use pre-cooked beetroot (it's less effort and no roasting required!). I use the beetroot you get in the salad section of your supermarket in packets. Then grate it with a grater.
- Walnuts - I lightly toast the walnuts in a small pan first. You don't have to toast them if you don't want to. You could also use other nuts too.
- Hard Goats Cheese - I prefer hard goats cheese but soft goats cheese will also work.
- No Fat Yogurt - use plain or Greek, it really doesn't matter.
- Honey - use runny honey to make the dressing.
- Wholegrain Mustard - needed for the dressing.
- Dijon Mustard - needed for the dressing.
- Freshly Grated Salt and Black Pepper - used to season to taste.

Ingredients
Beetroot and Goats Cheese Salad: -
- 100 g Baby Spinach Leaves washed.
- 100 g Beetroot cooked and grated.
- 50 g Walnuts lightly toasted.
- 50 g Hard Goats Cheese crumbled.
Honey mustard dressing: -
- 100 ml no fat yogurt
- 2 teaspoon runny honey
- 2 teaspoon wholegrain mustard
- 1 teaspoon Dijon mustard
- Freshly Grated Salt and Black Pepper
Instructions
- Place all the honey mustard ingredients into a jar and shake well, then season to taste.
- In a large bowl place the spinach leaves, grated beetroot and toasted walnuts.
- Pour in the honey mustard dressing and toss everything together until well coated with the dressing.
- Divide the salad between 2 plates, sprinkle over the crumbled goat’s cheese and serve. Season to taste if necessary.

This sounds like a great summer salad, Neil! I like how you shredded the beets in this one - I'm not a huge beet fan, but I suspect I might be more ok with 'em shredded versus cubed. The combination of flavors here just screams summer! I bet some sliced strawberries would work in here, too.
