Folks, if you're looking for a hassle-free dessert then I've got you covered with this irresistibly creamy easy no-bake strawberry cheesecake.

As soon as British strawberries appear in the shops I'm snapping them up and making all kinds of delicious summer recipes.

Smoothies like my easy chocolate strawberry smoothie and breakfasts like my strawberry and almond rye flakes are regular features in our household.

But this no bake strawberry cheesecake isn't just for summer. No it's the perfect addition to a dinner table at any time.

I've served this up as a stunning dessert at Christmas and it would also make a great Thanksgiving dessert too!

A slice of no bake strawberry cheesecake served on a plate with a dessert fork. Rest of the cheesecake on a plate in the background.

Made with fresh strawberries this ideal summer dessert requires no oven time. Just some time to set in the fridge.

It allows you to stay cool and avoid time in a hot kitchen during hot weather.

No gelatine is used to set this recipe so be sure you do leave it long enough in the fridge to set!

This delightful dessert is easy to prepare. It involves simple steps like crushing biscuits for the crust.

Then the creamy cheesecake filling is made with strawberries folded in.

Finally before serving it's decorated with sliced strawberries and a drizzle of honey on top for the perfect presentation.

It has a delicious burst of natural sweetness from the strawberries and a refreshing flavour that will impress your family and friends.

And if your cheesecake craving has been satisfied with this strawberry cheesecake but you want even more then be sure to try my strawberry whisky cheesecake and my no bake strawberry mousse cheesecake recipes!

This is the KitchenAid Stand Mixer I use. This KitchenAid heavy duty mixer is reliable, durable and efficient.

If you buy a KitchenAid stand mixer it's likely it will last you for life. Mine has so far!

This is the deep round cake tin with loose base that I use in the making of this cheesecake and many of my other cheesecakes too.

It's easy to push the base up slowly keeping the shape of the cheesecake with this cake tin. When you're removing it prior to serving.

For the light whisking you'll need a good hard wearing balloon whisk.

This is the one that I use which definitely won't break the bank either!

I'm still using this same balloon whisk that I bought 10 years ago!

    💭 FAQ's

Can I Use Low Fat Ingredients In This Strawberry Cheesecake?

Yes you can. Many of my other cheesecake recipes often use low fat ingredients like low fat cream cheese and reduced fat double cream. But the cheesecake takes longer to set. So for ease and to save time I'm using full fat ingredients here.

Do I Need A Stand Mixer To Make This Cheesecake?

No. A stand mixer would take the effort out of making this cheesecake but you can make it in a large mixing bowl with a whisk.

What's the best way to store this cheesecake?

Store your cheesecake in the fridge for up to 3 days.

    Can I freeze this cheesecake?

Yes. I find it’s best to cut the cheescake up into individual slices and freeze them in individual airtight containers. This makes them easy to take out and defrost in the fridge overnight.

No bake is the only option these days! It's so hot; I mean, it's always hot down here but this summer is crazy super hot and we start living at 10:00 and walk like zombies the other day LOL! As long as we don't have to turn our ovens on, we are looking for this kind of healthy and tasty refreshments! Thank you so much Neil!

I'm nor sure how so many people keep enjoying baking in heat waves - I'm definitely not approaching the oven most of summer lol. That's why a no bake dessert always is a good idea, and this cheesecake looks terrific!

I swear I never truly realize how much heat my oven puts out until summer. I wonder if a really high-end oven might be better insulated? I don't know. Who cares? I can make a no-bake cheesecake instead! I love no-bake cheesecakes, but I almost never make them for some reason. So thanks for inspiring me!

      Hi
I would like to make this recipe but in Spain, where I live, it's difficult to get double/heavy cream. Will it work if I use whipped cream (35.1% fat)?
      Thanks

Hi, I think you can use whipped cream with 35.1% fat as a substitute for double or heavy cream in this recipe. While it might slightly alter the texture and richness, it should still work well. (Although I have never tried it with whipped cream so I cannot gaurantee this!). If you're looking for a thicker consistency, you could also try adding a bit of mascarpone or cream cheese to the whipped cream. Happy cooking, and let me know how it turns out!
