As soon as British strawberries appear in the shops I'm snapping them up and making all kinds of delicious summer recipes.
Smoothies like my easy chocolate strawberry smoothie and breakfasts like my strawberry and almond rye flakes are regular features in our household.
But this no bake strawberry cheesecake isn't just for summer. No it's the perfect addition to a dinner table at any time.
I've served this up as a stunning dessert at Christmas and it would also make a great Thanksgiving dessert too!
Made with fresh strawberries this ideal summer dessert requires no oven time. Just some time to set in the fridge.
It allows you to stay cool and avoid time in a hot kitchen during hot weather.
No gelatine is used to set this recipe so be sure you do leave it long enough in the fridge to set!
This delightful dessert is easy to prepare. It involves simple steps like crushing biscuits for the crust.
Then the creamy cheesecake filling is made with strawberries folded in.
Finally before serving it's decorated with sliced strawberries and a drizzle of honey on top for the perfect presentation.

🔪 How To Make No Bake Strawberry Cheesecake
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy no-bake strawberry cheesecake:
Cheesecake Base
Step 1
- Grease and line cheesecake cake tin.
Step 2
- In a small saucepan melt butter.
Step 3
- Blitz the biscuits in a food processor.
Step 4
- Blitz the biscuits and butter in a food processor until clumpy. Or if you want just add the biscuit crumbs into the saucepan of melted butter as at step 2 of my easy no-bake caramel cheesecake recipe.
Step 5
- Press the mixture into the bottom of cheesecake / cake tin. Put the biscuit base in the fridge for at least an hour for it to set completely.
Cheesecake Topping
Step 1
- In a large mixing bowl lightly whisk the cream cheese, icing sugar and vanilla extract together until well mixed.
Step 2
- In separate bowl or in a stand mixer whisk the double cream until soft peaks form.
Step 3
- Fold cream cheese mixture into whisked double cream. Then stir in chopped strawberries.
Step 4
- Spoon the cream cheese mixture over the biscuit base and smooth down. Place the cheesecake in the refrigerator for at least 4 hours but preferably overnight until set.
Cheesecake Topping
Step 1
- When ready to serve carefully remove the cheesecake from the cake tin and decorate with the sliced strawberries and drizzle the honey over.

- Digestive Biscuits - U.S. readers use Graham Crackers instead.

- Cream Cheese - I just use soft cream cheese.

If you buy a KitchenAid stand mixer it's likely it will last you for life. Mine has so far!
This is the deep round cake tin with loose base that I use in the making of this cheesecake and many of my other cheesecakes too.
It's easy to push the base up slowly keeping the shape of the cheesecake with this cake tin. When you're removing it prior to serving.
For the light whisking you'll need a good hard wearing balloon whisk.
This is the one that I use which definitely won't break the bank either!
I'm still using this same balloon whisk that I bought 10 years ago!

Can I Use Low Fat Ingredients In This Strawberry Cheesecake?
Yes you can. Many of my other cheesecake recipes often use low fat ingredients like low fat cream cheese and reduced fat double cream. But the cheesecake takes longer to set. So for ease and to save time I'm using full fat ingredients here.
Do I Need A Stand Mixer To Make This Cheesecake?
No. A stand mixer would take the effort out of making this cheesecake but you can make it in a large mixing bowl with a whisk.
What's the best way to store this cheesecake?
Store your cheesecake in the fridge for up to 3 days.
Can I freeze this cheesecake?
Yes. I find it’s best to cut the cheescake up into individual slices and freeze them in individual airtight containers. This makes them easy to take out and defrost in the fridge overnight.

Cheesecake Base:
- 180 g Digestive Biscuits.
- 80 g Unsalted butter.
Cheesecake Filling:
- 300 g Full Fat Cream Cheese
- 80 g Icing Sugar
- 1 teaspoon Vanilla Extract

- 150 g Strawberries chopped.

- 100 g Strawberries halved.
- 1 tablespoon honey
Instructions
To Make The Biscuit Base:

- Melt the butter in a small saucepan.
- Blitz the biscuits in a food processor.
- Blitz the biscuits and butter in a food processor until clumpy.
- Press the mixture into the bottom of cheesecake / cake tin. Put the biscuit base in the fridge for at least an hour for it to set completely.
To Make The Filling:

I would like to make this recipe but in Spain, where I live, it's difficult to get double/heavy cream. Will it work if I use whipped cream (35.1% fat)?

Hi, I think you can use whipped cream with 35.1% fat as a substitute for double or heavy cream in this recipe. While it might slightly alter the texture and richness, it should still work well. (Although I have never tried it with whipped cream so I cannot gaurantee this!). If you're looking for a thicker consistency, you could also try adding a bit of mascarpone or cream cheese to the whipped cream. Happy cooking, and let me know how it turns out!
