Folks, so far in the last 2 weeks, I’ve made 3 batches of these strawberry banana valentines pancakes. Lady Lynne rates them as THAT good!

Could it be because every bite is filled with strawberries?

Is it the delicious hints of the cinnamon she smells as these cook in the pan?

Or is it just that these pancakes and so so tasty that whenever there’s an opportunity to make pancakes these are what Lynne wants and currently nothing else will substitute for them!

You should know that not only are these strawberry banana pancakes quick and easy to whip up, but they’re relatively healthy too. They contain no added artificial sugar and I’ve made them with vegetable oil instead of butter.

These pancakes are sweetened from the natural sugars in the strawberries and bananas. Plus you don’t need to use any butter in the pan to cook them either. Just a spray of cooking oil spray in the bottom of your pan will prevent these from sticking. They’ll each cook in a couple of minutes too.

Do you know what? Let’s be serious here. These pancakes are just too good to make only for your loved one. They make a fantastic breakfast that the WHOLE family will love too! Whilst I understand you might want to keep these as your “secret special Valentines recipe”, it’s good to share the love around isn’t it? 🙂

Tips for Making These Strawberry Banana Valentines Pancakes

  • When making the batter and combining the dry and wet ingredients, do not whisk. You only need to combine together and it doesn’t matter if the batter is still lumpy.
  • Rest the batter prior to cooking for up to 30 minutes, this helps the pancakes to turn out light and fluffy.
  • For cooking and best results use a nonstick frying pan.
  • Lightly grease the pan by using a cooking oil spray which also helps to prevent burning too.
  • The pan is ready for cooking on when some dropped water skitters across the surface.

  1. Did I read low-fat carbonara? Sold! I can’t wait for Thursday’s post as carbonara is seriously one of my top 3…maybe top 1…all-time favorite Italian dishes. But I’m getting ahead of myself. These pancakes look incredible, and the fact that you’ve made them 3 times in 2 weeks definitely catches my attention. For a while there, I was making Robbie pancakes on the weekends, but I haven’t done that in a while. I’m thinking I’ll make him a batch of these this weekend! And I might just have to steal a couple bites. Recipe looks delicious, Neil! Happy (early) Valentine’s Day to you and Lady Lynne!

I do love me some Carbonara too David. I hope you like that recipe on Thursday! But yeah, these Strawberry Banana Valentines Pancakes have proved to be so popular (with Lynne) that she won’t let me make her any of the other pancake recipes I do! It’s going to be a hard job to beat them! Hope you’ve got something special planned for Laura for Valentines day too! 🙂

  2. Sounds like one delicious stack! Of course…pancakes are always delicious 😉

I just don’t know how I’m going to better these pancakes now Rebecca! Although saying that I see you have a Banana Butterscotch Pancakes recipe. That sounds amazing, they might just coax Lynne off her addiction to the Strawberry Banana Valentines ones! 😉

  3. So indulgent and yummy this deck of pancakes look. I absolutely adore strawberry and banana together in smoothie form for my breakfast. Now it is pancakes time. Need to try these soon. 🙂

    • neil@neilshealthymeals.com says:

Thanks Neha. I forgot to take a shot of the maple syrup being poured over! But nevertheless the pancakes do look yummy and they certainly taste amazing! Thanks again for taking the time to comment! 🙂

I do like banana pancakes, but I normally make them with oat or buckwheat flour. Since winter strawberries ain’t normally that aromatic, I think combining them with bananas and cinnamon is a perfect solution. Lovely pancakes, Neil!

    • neil@neilshealthymeals.com says:

Thanks Ben, I haven’t tried these with oat flour, but they would probably work out OK, I would think!

  5. Such an awesome pancake recipe, Neil! A perfect combination of ingredients which I would love to combine.
