Hey folks! Today's new recipe is this tasty quick pesto pizza with a cherry tomato and basil salad topping.
Now hold onto something whilst I tell you a little secret about this pizza.

It's made with all shop bought ingredients. 😮
I know. Shock horror!
You've got used to me making all my recipes from scratch haven't you?
Well even I like to take a little time off from experimenting in the kitchen all the time and enjoy just sitting in front of the TV watching my favourite sports!
Amongst my favourite sports that I love to watch is Rugby Union. Particularly The Six Nations Championship. Which is on TV here at the moment.
It's an exciting battle between Scotland, England, France, Ireland, Wales and Italy. All teams trying to win the coveted "Grand Slam".
So you see this pizza can pretty much be cooked in just 10 minutes.
Which is handy because there's a 10 minute interval between two halves of the game!
Plus it only takes 10 minutes to prep too. Which can be done before the game!
So I'm not apologising in any way for this super quick all shop bought ingredients tasty pesto pizza recipe.
No, I'm too busy watching the matches and hoping that Scotland don't end up with the wooden spoon. Again. 😉

Equipment
Ingredients
- 2 Pizza bases shop bought
- 1 Jar Pesto sauce
- 200 g Mozzarella cheese grated
- 2 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 garlic clove crushed
- 125 g cherry tomatoes chopped
- 5 g basil leaves chopped
- Freshly ground salt and pepper
Instructions
- Pre-heat oven to 180c
- Spread pizzas with a covering of pesto sauce then scatter the mozzarella cheese over.
- Place pizzas directly onto an oven shelf and bake until cheese has melted.
- Whilst pizzas are cooking mix the olive oil, vinegar, garlic, cherry tomatoes and basil together in a bowl. Season to taste.
- Top pizzas with the cherry tomato and basil salad and serve.

Now you're talking, Neil! I love pizza, and we often do pizza nights while watching sports, too. I've gotta admit that I'm intrigued about the 6 Nations Championship. I might have to see if it's on tv here in the States. And I might have to make this pizza during halftime! Scotland are one up so far David. We just managed to defeat Italy on Saturday at the 6 Nations. I'm not sure what will happen in the next match versus Ireland on Saturday.
Still at least there's peltn of Pizza to be had should the game not go the right way. ๐

Neil, there's no shame in making a catered pizza and what a great choice for a Rugby match. As I'm writing this it appears England is going to hand France their bottom on a plate. Me, I'man All Blacks fan myself.
We often buy premade fresh pizza dough (all you do is unroll it) store-bought sauce and toppings. I'll end by saying go Scotland!

France did get a bit of a beating by England didn't they Ron, Wow! And unfortunately Scotland never got past Ireland either. Oh well! At least we've plenty of pizza's to console ourselves with! ๐

I think I have only ever had pesto ONCE before in my life, but I loved it. I had it on a turkey sandwich and it was amazing. This was back when I was okay to eat everything, ha! Now, not so much. ๐ That being said, I can only imagine pesto on pizza to be AMAZEEEEEEE! ๐

So unlike my recipes when everything is usually made from scratch. But I just wanted a change. Change is good isn't it?
