    Hey folks! If you don't have time to make breakfast in the morning why not give this raspberry overnight oats with almonds recipe a try?

    It's a breakfast that's prepared the night before and just takes 10 minutes to make!

    Take it out of the fridge the next morning and top it with your raspberries and almond flakes. It's delicious!!

    I love overnight oats. It's just so nice to wake up and know that your breakfast is already in the fridge just waiting for you.

    Ingredients

    • Skimmed Milk - you can also use almond milk, coconut milk or milk of your choice.
    • Porridge Oats - I use plain old fashioned rolled porridge oats. Quick oats might get too soggy and also steel cut oats probably won't be soft enough.
    • Greek Yogurt - I use % fat yogurt. You can use plain and also different flavours of yogurt to change this recipe up.
    • Chia Seeds - these help to thicken up the mixture.
    • Ground Almonds - helps to thicken and adds an almond flavour to the raspberry oats.
    • Honey - added for sweetness. You could also use stevia or maple syrup. Avoid adding actual sugar if you can.
    • Vanilla Extract - you can use vanilla essence but that's more processed than vanilla extract. Also vanilla extract has a stronger flavour.
    • Fresh Raspberries - fresh raspberries are best. You could use frozen raspberries instead though and stir them in before you place the bowl in the fridge overnight so they defrost.
    • Flaked Almonds - adds a lovely "crunch" to the raspberry oats.

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this raspberry overnight oats recipe:

    1. Place the milk, porridge oats, Greek yogurt, chai seeds, ground almonds, honey and vanilla essence in a bowl. Combine thoroughly.
    2. Cover the bowl and place in the fridge overnight to soak.
    3. In the morning divide the oats mixture between two bowls and top with the raspberries and almonds.

    Overnight oats will keep in the fridge in an airtight container for up to 5 days. So it's possible to make all your breakfasts for the week ahead on a Sunday.

    Substitute the yogurt, milk and honey for vegan alternatives such as vegan yogurt, coconut milk and agave nectar.

      • 400 ml skimmed milk
      • 100 g porridge oats
      • 60 ml Greek yogurt
      • 2 tablespoon chia seeds
      • 2 tablespoon ground almonds
      • 3 tablespoon honey
      • 1 teaspoon vanilla extract
      • 160 g fresh raspberries
      • 2 tablespoon flaked almonds

        Neil, Happy New Year to you and Lady Lynne, I hope that you had a wonderful break. This overnight oats is something I really need in my life right now. With another busy year just starting, easy, quick and healthy breakfasts will be perfect. I do know that my son will absolutely love this recipe, because oats are his favorite breakfast.

        I love oatmeal in the morning! We made oats for breakfast a couple of times over the holidays, and they were quite tasty. We didn't do the overnight version, though, so I might have to experiment with that soon. January is shaping up to be a crazy busy month here (more on that soon), and the thought of a delicious breakfast already made for me in the morning is super appealing. I love the raspberries and sliced almonds here! Happy New Year to you and Lady Lynne!

        These are wonderful. I like that there are endless options, as well. As opposed to skim milk, I like to use evaporated milk, if Iโ€™m using dairy. I donโ€™t know what the across-the-pond equivalent would be for that.

          I love the endless combinations too Mimi and yes we get evaporated milk over here. I'm not entirely sure if ours is the same as yours though as ours is usually used in baking and sometimes has sweetener added.

        These sound fantastic, Neil! I can't wait to give these raspberry overnight oats a go! I adore having berries with my breakfast - I think they're the perfect fruit to start the day with. Love the addition of the flaked almonds too.
