Folks I know you're just going to love this slow cooker beans and rice recipe.
Not only is it really tasty but it's also cheap to make too. It's perfect as a meal for the whole family or it can even be the perfect side dish.
You can easily leave this cooking in your slow cooker / crock pot whilst you get on with other things so it's a great time saver.
There are many different slow cooker red beans and rice recipes available on the internet so I've made mine a bit different.
I've added chorizo sausage into my beans and rice recipe in order to give it an extra meaty flavour.
You could easily leave the sausage out if you want to make this a vegetarian dish.

All you have to do for this recipe is a minimal amount of prep then the main ingredients (except the rice) all go into the cooker at the same time.
There are many different substitutions you can try out (check the substitution list further below) and as I mentioned it's a versatile dish too.
For instance If you're looking to feed a lot of people then you could use this simple recipe as a burrito filling or wraps filling. We have! I recommend it as it tastes delicious with a little sour cream!

🔪 Step By Step Instructions
Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make slow cooker beans and rice:
Step 1
- Place all the ingredients, except the uncooked Basmati rice, into your slow cooker.
Step 2 - 4
- Stir everything well together. Make sure all the spices and tomato paste are distributed throughout.
- Cook on low power for about 5 hours. Stir occasionally, on every hour is fine to ensure all the ingredients are cooked throughout. You may need to add more boiled water if the liquid is running dry.
- Half an hour before the end of cooking stir in the uncooked Basmati rice. Continue to cook and stir until the rice is cooked throughout. Again you might need to add a little more boiled water if the liquid is running dry.
Step 5
- Once cooked, season to taste and serve.
📖 Substitutions
- Tinned Red Kidney Beans - other red beans are fine to use as are black beans and pinto beans. You may need to soak dry beans overnight (check package directions) before using.
- Onion
- Green Bell Pepper - you can use any kind of bell peppers instead.
- Celery - if you leave out the celery add extra onion in instead.
- Garlic Cloves - I prefer fresh cloves but you could use a little garlic powder instead.
- Chorizo Sausage - this is where you can give the dish a whole different flavor. You could use a Spanish Chorizo or a Mexican Chorizo or a Andouille sausage. A good smoked sausage will also give this rice dish a delicious smoky flavor.
- Salt
- Black Pepper
- Chilli Flakes - you could substitute with a little cayenne pepper instead.
- Tomato Paste - tomato puree is fine here as well.
- Chicken Stock - if you are removing the sausage to make this vegetarian, then use a good quality vegetarian stock instead.
- Basmati Rice - you can substitute with another long grained white rice. If using brown rice you will have to allow a longer cooking time.

Store in an air tight container for 2 - 3 days in the fridge.
Can slow cooker beans and rice be frozen?
Yes portion up the beans and rice into individual containers and freeze.
Can I make this on the stove top instead?
Yes. You will need to saute the vegetables first (onion, pepper, celery and garlic) before adding the rest of the ingredients. Then once everything is cooked add in the uncooked rice to cook that through. Check your seasoning too.

Ingredients
- 2 x 400g tins red kidney beans drained and rinsed
- 1 large onion finely diced
- 1 green pepper diced
- 1 stalk celery diced
- 2 cloves garlic crushed
- 120 g chorizo sausage sliced
- 1 tsp. salt
- ยฝ tsp. freshly grated pepper
- Pinch chilli flakes
- 2 tbsp. tomato paste
- 500 ml chicken stock
- 100 g basmati rice uncooked
Instructions
- Place all the ingredients except the rice into slow cooker.
- Stir well.
- Cook on low for 5 hours. Stirring occasionally. Add more water if necessary.
- Half an hour before the end of cooking stir in the rice. Continue to cook and stir until rice is cooked. Add more water if required.
- Once cooked season to taste and serve.

I made this and the whole family loved it! We used iceberg lettuce wraps to serve it in! I did wonder about the nutritional values though. It says there is 1g of fat per portion, but there are 24g in 60g of chorizo alone! For 6 portions, just the sausage would be 4g each. Is 1g right?

Hi Catherine. Thanks for making my recipe. I'm really glad your whole family loved it. I looked into those nutritional values for you and yes it did seem strange and I hadn't picked up on it before. Basically I just press a button and the values are supposed to be calculated automatically. So I went in to my software and pressed the calculation button again and this time it's come back with 4g of fat per portion!! How very strange it didn't show that the first time? Anyway thanks for pointing that out. I'll send an email to the developer, as I pay for that software so not sure what happened there! Thanks again. ๐
