    Slow Cooker Chicken And Rice Soup

    Slow cooker chicken and rice soup. This delicious and filling soup is so easy to make. Just put everything into your slow cooker and let the magic happen!

    Folks as we descend into the cooler months of the year you're going to see more delicious soups like this slow cooker chicken and rice soup.

    I know it was only a few weeks ago that I brought you the first one, the slow cooker sausage and vegetable soup.

    But you can never get enough soup at this time of year, don't you agree?

    What's great about this soup, apart from it tasting amazing of course, is that it's pretty effortless.

    There's very little prep work required, fewer than 10 ingredients and you can get on with other stuff whilst this is cooking away in the background!

    As you can see from my pictures this is one big bowl of soup!

    It's really filling.

    I like to have my soup at lunchtime, but if you're looking for something to really satisfy you at dinner time you could equally have this chicken and rice soup as your main meal too.

    Also, let's not forget that this is also the time of year to consider giving your immune system a good boost.

    Studies have shown that a bowl of nourishing chicken soup can sooth such symptoms as the common cold!

    If you want to try and save even more time making this soup you could buy the onions, carrots and celery pre-chopped from your local supermarket.

    Really though it shouldn't take longer than 20 minutes to prep so I recommend just chopping the veggies yourself for freshness.

    For this slow cooker chicken and rice soup make sure that you do not use white rice otherwise you will have a mushy mess by the end!

    If you can't get brown rice substitute with wild rice instead.

    However, do not use any kind of instant rice here. The rice needs to be uncooked from the start.

    This soup still tastes amazing after being kept in the fridge for 2 - 3 days but after that I'd recommend freezing it.

    To freeze this chicken and rice soup make sure you allow it to cool completely first before portioning into individual containers.

    Equipment

    • Slow cooker
    • Kitchen knives
    • Chopping board
    • Measuring spoons
    • Measuring jug

    Ingredients

    • 300 g chicken breasts boneless, skinless and with any fat removed.
    • 100 g long grain brown rice
    • 1 small onion diced.
    • 2 medium carrots peeled and diced.
    • 1 celery stalk diced.
    • 850 ml chicken stock
    • 1 teaspoon dried mixed herbs
    • 1 tablespoon freshly chopped parsley optional garnish
    • Freshly grated salt and pepper seasoning
    Metric - US Customary

    Instructions

    • Place all the ingredients except the optional garnish and seasoning into your slow cooker.
    • Cover and cook on low for 3 hours. Top up with boiled water if required. The chicken should no longer be pink, and the rice should be tender.
    • After about 3 hours remove the chicken breasts from the slow cooker and shred using 2 forks. Return the shredded chicken to the slow cooker, add the chopped parsley, mix well, and cook for a further 5 - 10 minutes.
    • Season to taste and serve.

      Chicken and wild rice soup is one of my childhood comfort foods! Of course, back then it was from a can. Now it's homemade - homemade is ALWAYS better! I love the slow cooker conversion here, Neil. Like you, I enjoy having soup at lunch during the winter. It's getting cold and blustery here, and that means it's almost time for soup season. This one is going on the list!
