It's the perfect hearty homely recipe for a weeknight meal. Simple to prepare, healthy and filling too.
Using a slow cooker for this recipe means it takes minimum effort.
All that's required is 20 minutes to prepare this dish then you can leave your slow cooker to do the rest!
Although this chicken and chorizo Spanish stew is perfect for winters nights, it's definitely one that can be enjoyed all your round.
Not only that it's perfect to serve up at dinner parties too.
During the cooking the chicken absorbs all the delicious smoky flavours from the chorizo.
The sauce is a rich tasting tomato one with hints of herbs and just a little heat from the chilli.
My slow cooker chicken and chorizo is a remarkably light 140 calories per serving without any accompaniments.
Although chorizo sausage is quite high in calories and fat, just the minimum amout is used to get the maximum flavour.
If you want to keep this recipe as a low calorie dish then instead of serving with rice (as I like to) you could serve with lots of delicious green vegetables like broccoli or spinach.

It actually tastes even better the day after slow cooking after the combination of chorizo and delicious chicken have marinated together.

- Red Pepper - you can use any combination of bell peppers.
- Yellow Pepper - you can use any combination of bell peppers.

- Boneless Skinless Chicken Breasts - you can use skinless chicken thighs.
- Chorizo Sausage - Spanish Chorizo, Mexican Chorizo, Sliced Chorizo you can use any you choose.
- Tinned Chopped Tomatoes - I use canned tomatoes but you could use diced tomatoes and some tomato puree.
- Tomato Puree - tomato paste is fine.
- Chicken Stock or Vegetable Stock - you can use either.
- Paprika
- Chilli Powder - use mild or spicy chilli powders depending on how spicy you want the recipe.
- Mixed Herbs - you can omit if you want to.
- Salt and Freshly Ground Black Pepper

Your Questions About This Slow Cooker Chicken And Chorizo
- Can you put raw chicken in a slow cooker? Absolutely! Slow cooker recipes gently cook the chicken throughout meaning you get cooked, delicious moist tender chicken pieces and not dried out chicken!
- Do you have to fry chicken before putting in a slow cooker - No. To save time the chicken will cook in the slow cooker with little difference in the texture. However you can fry the chicken in a little olive oil before adding it to the slow cooker if you want a difference in flavour.
- How big is the slow cooker you use? I use a 3.5L slow cooker (see link above) but you can use a large one to double the recipe quantity if you wanted to.
- What if I don't have slow cooker? You can cook this in your oven in a casserole dish for approximately 1 hour at 200C degrees Fan.
- How long do I need to slow cook for? If short of time you can cook on high for 4 hours. But for best results cook on low for 6-8 hours.
- Can I use chicken thighs instead of chicken breast? Yes either are suitable. I just prefer breast meat as sometimes I find thigh meat quite fatty.
- How to bulk up this dish? You could stir in some vegetables whilst its cooking like frozen peas, butter beans or chopped up potatoes.
- Which kind of chorizo sausage should I use? There are many kinds of chorizo sausage available. I just usually use a plain Spanish chorizo from my local supermarkets' cold meat section. You can get spicy ones too if you want to use those.
- Can I freeze this chicken and chorizo recipe? Yes. Allow any leftovers to fully cool first then portion into individual containers and place in your freezer.
- How long can I keep this in the fridge for? Keep in the fridge for a maximum of 2 - 3 days. Any longer and you should consider freezing it.

- A plain rice, like bismati rice which is the rice I serve with my stew.
- Couscous is also a great option.
- On a bed of mashed potato or in a baked potato.
- Hunks of crusty bread.

- 1 red pepper diced
- 1 yellow pepper diced
- 1 large onion diced
- 2 cloves garlic crushed

Instructions
- Place all the ingredients into slow cooker. Stir well ensuring the chicken is covered by the liquid.
- Cook on low for 6 to 8 hours. Stirring occasionally.
- Once cooked season to taste and serve on a bed of rice.
