Slow cooker Italian chicken is a tasty and easy to make family recipe. Just 10 minutes to prep then everything goes into the slow cooker. Perfect for busy weeknights!
Slow cooker Italian chicken is just the thing for a hearty filling meal when you're short of time.
It's made entirely from scratch with no processed sauces or ingredients from a jar.
After you've sautéed the onions and peppers you just dump all the rest of the ingredients into your slow cooker and get on with other things.
Plus if you're on a health kick after the festive period, just one portion (excluding any pasta or rice) comes in at only 167 calories!
I'm often asked if you can put raw chicken into a slow cooker. Well the answer if yes, provided you then cook it until it's no longer raw or pink in the inside.
There's no need to brown the chicken before slow cooking.
I love that the chicken just slowly cooks away. All of the flavours marinating together to create such a unique and tasty dish.
Personally I find it better to cook chicken on low in a crockpot. You get more flavour from the dish that way but you could speed it up by cooking it on high if you wanted to save time.
Of course my version of Italian chicken has deviated slightly from the original or "chicken cacciatore" as it's often known.
I use chicken breasts instead of skinless and boneless chicken thighs.
You can of course use chicken thighs. It's just I can't be bothered removing the bones at the end of cooking!
Also, the original Italian recipe has a little wine added into it for extra flavour. Again feel free to add this too if you want to.
Just like most of my recipes this slow cooker Italian chicken is entirely customisable!
What to Serve With Italian Chicken?
- Serve your slow cooker Italian chicken on top of some wholegrain rice or penne pasta.
- You could also serve this with some mashed potatoes.
- It goes well too as a filling for baked potatoes.
- It's possible to eat this cold as part of a green salad.
- Or even use this chicken dish as a filling for wraps.

You can freeze any leftovers. Make sure you thoroughly defrost before re-heating. You can re-heat on your stove or in your microwave.

Equipment
Ingredients
- 1 teaspoon olive oil
- 1 small onion sliced
- 1 green pepper sliced
- 1 red pepper sliced
- 3 boneless skinless chicken breasts (about 750g)
- 400 g tin chopped tomatoes
- 100 ml vegetable stock
- 2 tablespoon tomato puree
- ยผ teaspoon dried mixed herbs
- Freshly ground salt and pepper.
- 1 tablespoon freshly chopped basil.
Instructions
- Heat the olive oil in a frying pan / skillet over a medium heat and sauté the onion and peppers until just beginning to soften but not burn for about 5 minutes. Add onion and peppers to the bottom of the slow cooker.
- Place the chicken breasts on top of the onion and peppers then cover with the tomatoes, stock, and tomato puree. Sprinkle the herbs over.
- Cover and cook low for 5-6 hours until the chicken is cooked and can be easily shredded. Turn off slow cooker.
- Remove each chicken breast onto a chopping board and shred it using two forks.
- Add the shredded chicken back into the slow cooker, stirring and coating well into the sauce.
- Serve the Italian chicken with some plain basmati rice or penne pasta.
