This baked Cajun stuffed chicken breast recipe is an easy to make dinner for all of the family.
Just 30-minutes to prep and 30 minutes in the oven and you've got great beautiful chicken breasts just bursting with flavour!
You could save time on the prep too by buying the Cajun seasoning, but I prefer to make my own (it's really easy!) just like in my Cajun spiced oven baked chicken recipe.
Just be aware that if you do use shop bought seasoning then the nutritional label will not be correct. It assumes you're making this chicken recipe with the specified ingredients.
These tasty oven baked Cajun chicken breasts are stuffed with mushrooms, peppers, tomato and melted mozzarella.
It's just the easiest recipe to suit all hungry mouths!

How To Make Cajun Seasoning
Step 1
- Grind all of the spices together to form a fine powder.
How To Make Baked Cajun Stuffed Chicken Breasts
Step 1
- Preheat oven to 200C (fan).
- Grease a baking dish with cooking oil spray.
Step 2
- Heat the oil. Sauté the mushrooms and diced pepper over a medium heat.
Step 3
- Mix the sauted vegetable mixture, cajun spice mix and diced tomato together.
Steps 4 & 5
- Slit the chicken breasts with a sharp knife horizontally and open them up.
- Spread each chicken breast with equal amounts of the cajun mushroom pepper tomato mixture. Top with grated mozzarella.
Step 6
- Fold chicken and place a toothpick in each end to hold it together.
Step 7
- Place chicken breasts in the greased baking dish. Spray with cooking oil and season.
Step 8
- Bake in preheated oven until chicken is cooked through. Allow to rest for a few minutes. Remove toothpicks before serving.
Substitutions
- Olive Oil - vegetable oil is fine.
- Button Mushrooms - any kind of chopped white mushrooms will do.

It should bake for 25-30 minutes until the chicken is fully cooked through. Although this could vary depending on the thickness of your chicken breasts.
Should I Bake The Chicken Covered Or Uncovered?
In this recipe it's fine to bake it uncovered as we want the chicken to crisp and brown a little.
Can I Freeze Stuffed Chicken?
Yes. Allow the chicken to cool completely first then portion into individual containers. Simply reheat in the microwave or in your oven.

What To Serve With Cajun Stuffed Chicken?
- Rice or couscous. Keep it simple and serve with a little plain wholegrain rice or couscous.
- Or for fancy rice and if you have time make my spicy rice with peas.
- Vegetables. I serve my baked stuffed chicken with green beans and sweetcorn.
- A simple green side salad of lettuce, spring onions and cucumber.
- A vegetable salad like roast potato and green bean salad.

For the Cajun Seasoning: -
- 1 teaspoon caraway seeds
- 1 teaspoon cumin seeds
- 2 teaspoon paprika
- 1 teaspoon cayenne pepper
- ยฝ teaspoon freshly ground pepper
- 1 teaspoon dried oregano or dried thyme
For the Baked Stuffed Chicken: -
- 1 tablespoon olive oil
- 100 g button mushrooms sliced
- ยฝ green bell pepper diced
- ยฝ red bell pepper diced
- 1 tomato diced
- 4 chicken breasts. About 1 Kg.
- 75 g grated mozzarella
- Cooking oil spray
- Salt and freshly ground black pepper
Instructions
For The Cajun Seasoning: -
- Grind all the spices in a pestle and mortar or a spice grinder until a fine powder is formed.
For The Baked Stuffed Chicken: -
- Preheat oven to 200C (Fan) and lightly grease a baking dish.
- Heat the oil in a non-stick frying pan and sauté the mushrooms and diced pepper for 4 - 5 minutes until softened.
- In a small bowl mix together the sautéed vegetables, Cajun seasoning, and diced tomato.
- Slit the chicken breasts with a sharp knife horizontally (but not all the way through) and open them up.
- Spread each open chicken breast with equal amounts of the Cajun mushroom pepper tomato mixture on one side. Then scatter over an equal amount of the grated mozzarella.
- Fold other side of chicken over on top and place a toothpick in each end to hold it together.
- Place each chicken breast in the greased baking dish. Lightly spray with some cooking oil and season with the salt and pepper.
- Bake for about 25 minutes until chicken is cooked through. Allow to sit for a few minutes and remove toothpicks before serving.
