    Chicken chorizo and courgette casserole is a delicious, quick and healthy budget dinner. The recipe makes up to 8 portions so there’s plenty to go round the family and there should be plenty to freeze too!

    Folks, today I'm bringing you this tasty chicken chorizo and courgette casserole

    It features in-season courgettes (zucchini), low cost tinned vegetables and other basic store cupboard staple ingredients.

    You'll not find this casserole lacking in flavour in any way either, just because it's low cost. Nope, it's got bags of it!

    Plus it's got plenty of healthy benefits and it's really filling too.

    A good bowlful of this heart healthy casserole should be enough to fill those hungry tums at dinner time.

    But you could also serve it with some hunks of crusty bread too just to be sure.

    I make no apologies for being a big fan of chorizo.

    Whilst some might complain that it's quite a fatty meat, the quantities that I use in my recipes are really small compared to the taste and the flavours you get out of this versatile sausage, which are huge!

    As part of a healthy meal plan the use of chorizo in recipes provides excellent value for money.

    Hopefully you can get your hands on a reasonably good quality chorizo sausage which should only cost you a couple of pounds in your local supermarket.

    Then you can freeze the part you don't need.

    Just like this recipe where you can easily freeze the portions you don't need, freezing that extra chorizo is all money in that freezer bank!

    I usually cut the leftover chorizo into 1-inch pieces and freeze them so that I can make use of them in my other chorizo recipes when needed.

    Equipment

    • Casserole pot
    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Garlic press
    • Measuring jug
    • Measuring spoons
    • Wooden spoon

    Ingredients

    • 1- inch sized piece chorizo , chopped into small pieces
    • 600 g chicken breasts , cut into bite sized chunks
    • 3 baking potatoes , chopped with their skin left on
    • 2 onions , diced
    • 2 courgettes , sliced
    • 2 garlic cloves , crushed
    • 1 teaspoon paprika
    • 1 teaspoon chilli powder
    • 400 g tin chopped tomatoes
    • 500 ml chicken stock
    • 400 g tin chickpeas , drained and rinsed
    • salt and pepper
    • 1 tablespoon coriander , freshly chopped
    Metric - US Customary

    Instructions

    • Pre-heat the oven to 180C Fan
    • Sweat the chopped chorizo in a large casserole dish over a low heat, stirring for about 2 to 3 minutes until all the juices are released and the chorizo pieces are browned but not burnt.
    • Add the chicken, potatoes, onions and courgettes to the pan and cook stirring together for a few minutes until the chicken is no longer pink.
    • Add the garlic, paprika, chilli, tomatoes, chicken stock and chickpeas. Bring the contents of the pan to a boil and then turn down to simmer for 5 minutes.
    • Transfer to centre of preheated oven and cook for 50 – 60 minutes, stirring half way through.
    • Seasons to taste and serve in bowls with the chopped coriander sprinkled over.
    Prevent your screen from going dark

    Notes

    Serve with hunks of crusty bread if required.

      I love casseroles! They are usually easy to make, and they feed a crowd...or they can be frozen for super easy meals later. So I really like the idea about using a bit of chorizo for flavor. It is a very flavorful meat, and just one link is totally an acceptable amount to include in an entire casserole. Great use of the seasonal eggplant (courgette) here, too! Sorry to hear about the taxman, Neil. That stinks. But you have a great attitude about it! I hope your week is off to an excellent start, my friend!

        Casseroles are one of our main stays David as I can spend just an hour or so making a huge one, like this and as you say, there's plenty for sticking in the freezer for another day. And you should see our freezer, lol, it's full of casseroles and bakes, frozen for nights when I know I'm going to get in late from work.

        Yeah, the taxman. Nothing you can do about it eh, except to rein in the spending even more! 🙁

      This looks delicious Neil! And I hear you on "the tax man cometh." We got b**ch slapped this year because I did pretty well last year (but taxes weren't directly taken at the time). And speaking of budget, we are really going to have to buckle down this fall, because Alex will make less. And Chicago be expensive.

      This looks like a great recipe Neil.... although I am vegetarian, l do prepare meat dishes for my son. He is also a big fan of chorizo and chicken and will absolutely love this meal. I love that you can freeze extra portions as well...it really makes it a time and money saver.

      Oh what a beautiful combo of chicken, potatoes, and chickpeas. That's a perfect comfort dish (Which I personally would reserve for fall cause it's too hot now). Love the addition of chorizo too. You're right - just a little of them introduces an amazing flavor.

        Thanks Ben. If only our seasons in Scotland were perfect and it was beautiful sunny weather outside and I could choose a salad dish today. Alas, as I sit here in Aberdeen where I'm currently working it's more like winter outside and for me, today this dish is perfect. Although I completely understand why it should actually be a fall recipe! 🙂
