Folks, today I’m bringing you this tasty chicken chorizo and courgette casserole as it features in-season courgettes (zucchini), low cost tinned vegetables and other basic store cupboard staple ingredients.

You’ll not find this casserole lacking in flavour in any way either, just because it’s low cost. Nope, it’s got bags of it!

Plus it’s got plenty of healthy benefits and it’s really filling too.

A good bowlful of this heart healthy casserole should be enough to fill those hungry tums at dinner time, but you could also serve it with some hunks of crusty bread too just to be sure.

I make no apologies for being a big fan of chorizo.

Whilst some might complain that it’s quite a fatty meat, the quantities that I use in my recipes are really small compared to the taste and the flavours you get out of this versatile sausage, which are huge!

As part of a healthy meal plan the use of chorizo in recipes provides excellent value for money.

Hopefully you can get your hands on a reasonably good quality chorizo sausage which should only cost you a couple of pounds in your local supermarket and then you can freeze the part you don’t need.

Just like this recipe where you can easily freeze the portions you don’t need, freezing that extra chorizo is all money in that freezer bank!

I usually cut the leftover chorizo into 1-inch pieces and freeze them so that I can make use of them in my other chorizo recipes when needed.

Here’s a selection of my most popular chorizo recipes which you could use up any leftover chorizo with:-

Sweet Potato Garlic and Chorizo Soup

Chorizo Tomato Lentil and Kale Soup

Chorizo and Lentil Stew

If you’re like me and constantly balancing your monthly budget, then this chicken chorizo and courgette recipe will definitely help that budget go further.

I am constantly balancing my budget between my goal of paying off the mortgage within 10 years, saving for retirement (eventually it’s a long way off!), holidays and just basically living.

When the tax man takes an extra £100 a month from my already hard earned wages (as he did at the end of last month and will do each month going forward) then it’s time to have to adjust even more (groan).

It was a bit of a blow as well as a not so nice surprise as you can imagine. However, there’s no point in moaning, I’m just adjusting to it and using it as a good reason to take stock and be happy and grateful for all that I have, and to look to see how else I can be more efficient.

I keep looking at that back garden of ours as it lies there covered with a weed filled lawn. My brother makes an excellent use of his garden, producing vegetables for his family. I think next year I’ll need to get a gardening project up and running to make better use of that area and maybe grown some veggie basics for using in some of my recipes.

Anyway, I digress…..hope you enjoy this seasonal chicken chorizo and courgette casserole budget themed recipe!

In keeping with what’s in season join me on Thursday for a new strawberry chia overnight oats breakfast recipe. One that you can enjoy whilst watching the Wimbledon!

  1. I love casseroles! They are usually easy to make, and they feed a crowd…or they can be frozen for super easy meals later. So I really like the idea about using a bit of chorizo for flavor. It is a very flavorful meat, and just one link is totally an acceptable amount to include in an entire casserole. Great use of the seasonal eggplant (courgette) here, too! Sorry to hear about the taxman, Neil. That stinks. But you have a great attitude about it! I hope your week is off to an excellent start, my friend!

Casseroles are one of our main stays David as I can spend just an hour or so making a huge one, like this and as you say, there’s plenty for sticking in the freezer for another day. And you should see our freezer, lol, it’s full of casseroles and bakes, frozen for nights when I know I’m going to get in late from work.

Yeah, the taxman. Nothing you can do about it eh, except to rein in the spending even more! 🙁

  2. This looks delicious Neil! And I hear you on “the tax man cometh.” We got b**ch slapped this year because I did pretty well last year (but taxes weren’t directly taken at the time). And speaking of budget, we are really going to have to buckle down this fall, because Alex will make less. And Chicago be expensive.

      Thank you so much Susie!

Well we both seem to be in the same boat don’t we. Both of us having to buckle down. Well, if you’ve got any tips please share them with me and I’ll do the same with mine! 🙂

  3. This looks like a great recipe Neil…. although I am vegetarian, l do prepare meat dishes for my son. He is also a big fan of chorizo and chicken and will absolutely love this meal. I love that you can freeze extra portions as well…it really makes it a time and money saver.
    Thanks for a great recipe
    Have a wonderful day 😃

      Thank you Ashika.

I really hope that you get a chance to make this for your son. As it makes 8 portions you’ll have plenty for the week ahead too! 🙂

Oh what a beautiful combo of chicken, potatoes, and chickpeas. That’s a perfect comfort dish (Which I personally would reserve for fall cause it’s too hot now). Love the addition of chorizo too. You’re right – just a little of them introduces an amazing flavor.

    • neil@neilshealthymeals.com says:

Thanks Ben. If only our seasons in Scotland were perfect and it was beautiful sunny weather outside and I could choose a salad dish today. Alas, as I sit here in Aberdeen where I’m currently working it’s more like winter outside and for me, today this dish is perfect. Although I completely understand why it should actually be a fall recipe! 🙂
