This leftover roast chicken soup is a great soup to make if you've got a leftover chicken carcass.
The carcass is used to make the chicken stock first and then the vegetables are added.
But if you don't have a chicken carcass you can easily make my easy chicken soup recipe instead using just one uncooked chicken breast!
This is my cheats soup for when I don't have time to make chicken stock from the carcass first.
Everything goes into the same soup pot to create this delicious chicken broth. Meaning less fuss, less effort and less washing up!
Usually I'll make this soup on a Monday from the leftover carcass of a whole chicken that I've roasted for our Sunday roast chicken dinner.
I'll strip the carcass of any visible leftover meat first and use that for my leftover chicken stir fry on Monday evening.
I might also use any leftover roast chicken meat to make another chicken soup like my chicken noodle soup.
In a time when all our bills are on the way up this homemade chicken soup recipe helps to ensure there is NO food waste in our house!

Also If your slow cooker is large enough to fit the chicken carcass into (mine isn't) you can easily make this in the slow cooker instead.

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this leftover roasted chicken soup recipe:
Step 1
- Place chicken carcass, peppercorns and bay leaf in a large soup pot / large saucepan. Cover with cold water.
Step 1 cont.
- Simmer chicken carcass over a low heat to medium heat for one hour.
Step 2
- Remove chicken carcass, peppercorns, bay leaf and any chicken bones using a slotted spoon or fine-mesh strainer.
- Add in any leftover chicken meat still on the carcass or any other leftover chicken meat you might have like leftover rotisserie chicken.
Step 3
- Measure and if necessary make liquid up to 1.25L with additional chicken stock.
Step 4
- Add salt, carrots, onion, celery, sweetcorn, and rice. Simmer for 15-20 minutes until the rice and vegetables are cooked.
Step 5
- Season to taste. Serve with parsley scattered over.
Substitutions
- Leftover Roast Chicken Carcass
- Whole Black Peppercorns
- Bay Leaf
- Chicken Stock - you can use your own homemade chicken stock if you have any.
- Cooking Salt
- Carrots - other root vegetables like swede can also be used.
- Onion
- Celery
- Frozen Sweetcorn - you could use frozen peas instead.
- Basmati Rice - use uncooked rice. Any white rice like Jasmine is also fine. Brown rice too.
- Freshly Ground Salt And Black Pepper
- Chopped Fresh Parsley (optional for garnish) - you could use other fresh herbs like coriander.

Ingredients
- 1 leftover roast chicken carcass skin removed
- 1 tbsp. whole black peppercorns
- 1 bay leaf
- 250 ml chicken stock
- 1 tsp. salt
- 2 carrots peeled and diced
- 1 large onion peeled diced
- 1 celery stick diced
- 165 g frozen sweetcorn
- 50 g basmati rice
- Freshly ground salt and black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Place the leftover roast chicken carcass, peppercorns, and bay leaf in a large soup pot. Cover the chicken carcass with cold water and simmer gently for 1 hour
- After an hour remove the carcass, any whole peppercorns, the bay leaf, and any other bones using a slotted spoon. Leave any chicken pieces in the soup pot. If there's still chicken on the carcass that can be removed and added too.
- Using a sieve pour the liquid into a measuring jug to measure how much liquid there is. Add liquid back to soup pot with chicken pieces and make the liquid up to 1.25L total using the chicken stock and extra water if required. Check flavour. You may still need to add an extra stock cube even if no extra liquid is required.
- Add the salt, carrots, onion, celery, sweetcorn, and rice. Simmer for 15-20 minutes until the rice and vegetables are cooked.
- Season to taste with salt and pepper and serve in bowls with parsley scattered over.
