Just like my no bake breakfast granola bars, I made these no bake banana energy bars with healthy coconut butter as opposed to dairy butter.
You can subsitute dairy butter with coconut butter in most recipes. I find the best way to see if it works is simply to try it.
I have to say I’m loving coconut oil as I use it in more of my home baking recipes.

No Bake Banana Energy Bars Recipe

Ingredients
- 2 tablespoon coconut butter plus a little for greasing
- 4 tablespoon honey
- 1 ripe banana chopped
- 1 teaspoon cinnamon powder
- 100 g pumpkin seeds
- 100 g sunflower seeds
- 100 g chopped mixed nuts
- 50 g sultanas
- 30 g porridge oats / oatmeal
Instructions
- Grease a 20cm x 20cm square baking tin with a little coconut oil and line with greaseproof paper.
- In a small saucepan melt the coconut butter and honey together.
- Place the chopped banana, melted coconut butter and honey mixture into a blender and blend together for a few seconds.
- Add the cinnamon, pumpkin seeds, sunflower seeds and chopped mixed nuts and blend again until thoroughly mixed together.
- Scrape the mixture from the blender into a bowl and stir in the sultanas and oats.
- Flatten the mixture into the tin and place in the freezer for one hour.
- Remove from the freezer after one hour, cut into 10 bars and keep sealed in an airtight container in the fridge for up to one week.

Brilliant! Gotta love bananas, and then all their natural sweetness brought out in this recipe.
I'm pretty sure you'll love these, but yourself, you'll want to miss out the oats and reduce the honey a little bit too so they still solidify in the freezer.

Coconut butter is only something I recently introduced myself into my home baking and I'm steadily using it more and more. It's worth giving it a try, although it is more expensive than dairy. (Well, it is here in the U.K. anyway!). Love your blog by the way! Different from the mainstream, I like that! 😀
