    This stir fried chicken and baby corn recipe is nice and easily done as shown in this step by step guide. It can be put together and cooked in less than half an hour!

    So you’ve got limited time or you really can’t be bothered spending time in your kitchen putting something healthy and nutritious together as a main meal, just for yourself?

    Well don’t compromise and reach for something unhealthy, this stir fried chicken and baby corn recipe is the perfect stir fry for you!

    This chicken stir fry recipe can be prepared and served in less than 30 minutes.

    First we make a really simple delicious sauce.

    Next some noodles are prepared and then the rest of the ingredients are sautéd and steamed.

    Then we add the sauce, check the chicken is cooked and serve everything on a bed of noodles. That's it!

    Stir fries are healthy when cooked with the minimal amount of necessary oils.

    This easy chicken stir fry only requires a couple of sprays of low fat spray to stop the chicken from sticking to the wok.

    Then the vegetables actually steam cook in their own juices with just the addition of the tablespoon of water.

    Watch not to overcook the chicken or the vegetables.

    You want the chicken to be perfectly moist and the vegetables to still retain their “crunchiness” and flavour.

    This stir fried chicken and baby corn recipe provides you with a more than adequate daily portion of protein, enough carbs for energy, low in fat and low in calories too, so what more could you look for?

    Ingredients

    • Cider Vinegar
    • Honey
    • Light Soy Sauce
    • Sunflower Seeds
    • Freshly Ground Black Pepper
    • Low Fat Cooking Oil Spray
    • Boneless Skinless Chicken Breasts
    • Baby Corn Cobs
    • Mange Tout
    • Whole Wheat Noodles

    Instructions

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this chicken and baby corn stir fry:

    Sauce ingredients in a small bowl.

    Step 1

    • Place all sauce ingredients into a small bowl. Mix together well. Season with black pepper.
    Cooked wholewheat noodles in a saucepan.

    Step 2

    • Cook noodles according to packet instructions. Drain.
    Chicken stir fried in a wok.

    Step 3

    • Heat the wok on a high heat. Then turn down to a medium heat and stir fry the chicken.

    Step 4

    • Add hot water, baby corn cobs and mange tout. Stir fry.

    Step 5

    • Add the sauce. Stir fry and check chicken is cooked through.

    Step 6

    • Serve cooked chicken and baby corn stir-fry on the bed of noodles.

    Substitutions

    • Cider Vinegar - rice wine vinegar
    • Honey
    • Light Soy Sauce
    • Sunflower Seeds - you could use sesame seeds instead.
    • Freshly Ground Black Pepper
    • Low Fat Cooking Oil Spray - you could wipe some olive oil or vegetable oil around the inside of the wok instead.
    • Boneless Skinless Chicken Breasts
    • Baby Corn Cobs
    • Mange Tout - you can also use snow peas, broccoli florets, green beans or sugar snap peas instead.
    • Whole Wheat Noodles - you could substitute with rice instead preferably brown rice.

    Ingredients

    Stir-fry sauce

    • 2 teaspoon cider vinegar
    • 2 teaspoon runny honey
    • 2 teaspoon light soy sauce
    • 2 teaspoon sunflower seeds
    • Freshly ground black pepper

    Stir-fry

    • Low fat cooking spray
    • 350g Boneless skinless chicken breasts cut into thin strips
    • 80g Baby corn cobs sliced lengthways
    • 160g Mange tout trimmed
    • 100g Nest of whole wheat noodles
    Metric - US Customary

    Instructions

    Sauce

    • Put all the sauce ingredients into one small dish and mix together well, season with black pepper.
    • In a separate saucepan add the noodles and cook according to packet instructions, then drain.
    • Spray a wok with 5 sprays of the low fat cooking spray, turn the heat underneath the wok to high, and then turn the heat down to medium.
    • Add the sliced chicken and stir fry, working quickly for 1 minute to prevent the chicken from sticking.
    • Add 1 tbsp. hot water, and then add the baby corn cobs and mange tout. Stir fry everything together for 5 minutes.
    • Add the sauce; stir fry for one further minute.
    • Check the chicken is cooked, and then serve the stir fry on the bed of whole wheat noodles.
