It's really been an amazing summer here in the UK so far hasn't it?
I've been eating salads like they're going out of fashion!
We've been eating so much of my easy healthier coleslaw that I needed to come up with another healthy coleslaw recipe quick to add a bit of variation!
That's where this delicious creamy kale coleslaw entered our lives!
So how do we make this creamy coleslaw?
First we take an amazing healthy selection of ingredients.
Kale, red cabbage, carrots, sweet apple and crunchy celery.
Then we toss them all up together and coat them in a delicious tangy home made low calorie creamy dressing.
It doesn't take long to put this healthy creamy coleslaw together either. Just 30 minutes.
It's perfect for your BBQ parties as you'll get at least 8 servings out of this recipe. That's 8 BIG servings.
There's nothing to worry about calorie wise either as there are only 100 calories per serving of this creamy kale coleslaw.
Plus, as I said in the introduction paragraph, this recipe is perfect at any time of the year.
So, if you're reading this recipe and it isn't summer, no worries.
You could easily pair this coleslaw with a grilled turkey burger.
Or an oven baked chicken dish like chicken kievs or cajun spiced oven baked chicken.
Why This Creamy Kale Coleslaw Is Good For You
- Kale has lots of nutrients and is very low in calories. It's one of the most nutrient-dense foods on the planet.
- Red cabbage contains insoluble fibre and as a potassium rich food can help to lower blood pressure.

Creamy Kale Coleslaw with Apple Recipe

Equipment
Ingredients
For the creamy dressing :-
- 5 tablespoon mayonnaise low fat
- 1 teaspoon Dijon mustard
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon cider vinegar
- 1 teaspoon honey
- Freshly ground salt and pepper
For the kale slaw :-
- 100 g curly kale stalks removed, sliced and washed
- 200 g head red cabbage shredded
- 2 carrots peeled and grated
- 2 medium Granny Smith apple chopped into 1cm pieces
- 1 stick of celery chopped
Instructions
For the creamy dressing :-
- Whisk together mayonnaise, Dijon mustard, olive oil, lemon juice, cider vinegar and honey in a small bowl, then season to taste.
For the kale slaw :-
- Put all of the coleslaw ingredients in to a large mixing bowl and mix well. Pour over the dressing and massage the dressing into the coleslwaw using your hands. Serve immediately or place in the fridge and until required.

Interesting! I love a good coleslaw, but I don't think I've ever had one with kale. I don't use kale that much as I've never really experimented with how to use it. But this sounds like an excellent recipe, Neil! And I love the added bit of apple in there. This side dish would go great with some good BBQ! ๐

But when it's combined with a selction of crunchy vegetables like cabbage and carrots and the sweetness of an apple and a tasty dressing then it's really tasty! ๐

Neil - we are thinking alike today!!! I have a slaw up too - but I am so so loving your version with apple and celery! I can almost taste that honey-mustard-vinegar dressing paired with the apples, celery, carrots and cabbage ! Like you said, this is most definitely a year round recipe - in fact this would be a nice light side to serve around the holidays - after all, all those Christmas cookies, pies and cake need to be balanced out right?

Neil, we love coleslaw over this way. As a matter of fact, if you go to a pizza restaurant here you will always be served coleslaw. Not as fancy as your coleslaw however. Great combination of veggies and I love the apple addition.
