Oh man, all of these soups sound delicious, Neil! It's cold and blustery here today, so a good bowl of soup would definitely be welcome. Although this December I managed all my cooking (and eating) much better than previous years, January is always for lighter meals. This collection is beautiful for an enjoyable "post-recovery" Christmas period (haha). My favourite would be Mediterranean soup with some crumbled feta or greek yogurt. And I'm making some beetroot fennel soup today, it's my personal favourite when I need to fix my diet 😉

I agree Ben. After the indulgent Christmas period it's nice to get back to eating healthier and lighter meals in January. Beetroot fennel soup sounds lovely! I can't remember ever having tried that.

A nice lot of low-calorie soups you've put together Neil. They all look to be perfect for a low-cal lunch and as that's my 2019 goal (lo-cal meals) these will be cataloged and tried. I especially like the looks of the Mediterranean soup and it will be first to make.
