    Folks this comforting home-made turkey rice casserole is a quick healthy meal that all the family will just love!

    Delicious turkey mince (or ground turkey to my U.S. friends!) flavoured with cumin, paprika and chilli.

    Perfectly cooked rice, tomatoes, sweetcorn and pepper.

    All cooked together and topped off with a delicious melted cheese topping!

    What's not to love?

    You'll get 6 servings from this budget turkey rice casserole and any leftovers are freezable too.

    No matter what the weather, this ground turkey casserole is a perfect all year round family favourite.

    There's really not much effort required to make this tasty dish.

    And it'll be ready and on the table to serve in about an hour!

    Well folks that's us back from a successful Cumbria Way walk.

    We did 6 days of walking 70 miles of glorious English Lake district scenery last week.

    Each night we stayed somewhere different on route from our start point of Ulverston to our destination, Carlisle.

    Some amazingly tasty food was had as were some fine ales drunk too!

    But do you know what?

    Whilst all that was an amazing experience after a bit of time you just hanker for some good old fashioned home cooked food, dont you? So, this ground turkey rice casserole is the business!

    This is the basic pasta dish I use.

    It's a great low cost but good quality baking and roasting dish.

    It's perfect for lasagne, side dishes and desserts. It's dishwasher, freezer and oven safe too.

    How To Make This Turkey Rice Casserole

    • This easy turkey rice casserole starts off by browning the turkey mince first.
    • No additional oil is needed for this as the heat from the pan will dry fry the turkey mince and release those delicious turkey juices.
    • We can then also use those wonderful juices to sauté the onion, garlic and green pepper in.
    • The spices, sweetcorn, tinned tomatoes, stock and rice are all then stirred in.
    • Brown rice is used as those grains take the same amount of time to cook as the rest of the casserole. White rice will end up all mushy.
    • Pour all of those ingredients into a casserole dish. Top with grated cheese and sit back whilst it bubbles away in your oven making your house smell amazing!

    I suggest serving a portion of this turkey rice casserole with some vegetables on the side like peas or broccoli or maybe a green salad of lettuce, cucumber and chopped spring onions.

    Turkey Rice Casserole Recipe

    Equipment

    • Pasta dish
    • Non stick frying pan
    • Kitchen scale
    • Measuring spoons
    • Kitchen knives
    • Measuring jug
    • Chopping board
    • Wooden spoon
    • Slotted spoon
    • Garlic press

    Ingredients

    • 500 g lean turkey mince
    • 1 large onion diced
    • 1 clove garlic crushed
    • 1 green pepper chopped
    • 1 teaspoon ground cumin
    • ½ teaspoon paprika
    • 1 teaspoon chilli powder
    • 70 g frozen sweetcorn
    • 1 400 g tin chopped tomatoes
    • 100 ml chicken stock
    • 150 g 30 minutes easy cook brown rice
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 75 g grated low fat cheddar cheese
    Metric - US Customary

    Instructions

    • Pre-heat oven to 180c Fan
    • Heat a large non-stick pan over a medium heat and brown the turkey mince for about 5 minutes, stirring frequently. Remove with a slotted spoon and set aside leaving the turkey juices in the pan.
    • Add the onion, garlic and green pepper and sauté in the turkey juices together until soft, about 5 minutes.
    • Stir in the spices for 1 minute then the sweetcorn, chopped tomatoes, stock, rice and salt and pepper. Add back the browned turkey and allow to simmer for a couple of minutes.
    • Lightly grease a suitably sized casserole dish and carefully spoon all the cooked ingredients into the dish. Sprinkle the cheese over the top.
    • Cook in centre of oven for about 25 - 30 minutes until cheese is bubbling. Serve.
    Prevent your screen from going dark

    Notes

    All ovens vary with cooking time so you might need to cook your casserole for a little longer than stated if your rice isn't soft enough for your liking.

      Glad to hear the walk went well for you guys! I totally know what you mean about being on vacation and just wanting to come back home to comfort food. This casserole is definitely a good comfort meal! In fact, this would be great to keep on hand for post-Thanksgiving here in the States. We always have leftover turkey, so a good casserole recipe would be much appreciated. I can't wait to see photos from the walk!

        It was a great week walking in some amazing scenery David. And we were lucky too as the weather turned for the worse at the end so we had some good weather along the way.       Neil, nice casserole. I like the chili powder, paprika and cumin in the mix and using brown rice is a stroke of genius.

        Glad you like the casserole Ron. Yes this is one of the few occasions I find you can't use white rice and only brown rice will suffice. Getting round to editing those Lake District Holiday photographs today!

      I'm so jealous! The first time we traveled in England was to the Lake District, and we walked miles every day, with only a few spring lambs to converse with. If my husband and I went walking where we live, we'd eventually get surrounded by cop cars. It's just so different. In any case, ground turkey really is wonderful, and my husband loves creations such as this. I do as well, I just eat much less meat by choice. Fabulous!

        I'm glad you've spent time in the Lake District Mimi and you'll know exactly how beautiful it is. We were so lucky with the weather too! And there were hundreds of spring lambs everywhere. Some of which will pop up in the photographs on the blog when I publish them.

        Ground turkey is really versatile and I'm glad you like this recipe. We also eat less meat by choice. Although I must admit I did enjoy it most nights on the walk. But then again I'd burnt off the calories to be able to eat it all and enjoy it! Ha ha! 🙂

        We were pretty hungry at the end of each day's walk Shashi and this casserole would have been great if it had been available. But we ate out each night so that was just as nice. Yes, I was editing the vidoes this evening so I do intend to get the first set of photographs up in the next couple of weeks. All being well!

      Sounds like a lovely trip you had, Neil! I’m impressed with the miles you covered. It sounds like it was beautiful, too! And, I love this casserole recipe. Especially since you used brown rice and included all the veggies! So healthy and delicious! And who can resist the cheese on top! No one in my house, for sure!

      Neil, this was great! I have been trying to find healthy and GOOD recipes, and this hit the mark! My rice was too en dente at first tho, with still some liquid, after 33 min cook time. Was I to layer rice on bottom? Would you suggest I cook longer? at a higher tem? covered?
      Next time I think Illl try your sausage and pasta!! Thanks SO much

        Hi Cathy, thanks for taking the time to comment and for making my recipe. I'm glad you enjoyed it! No the rice isn't cooked on the bottom its mixed throughout the casserole. But yes it sounds as if though you just need to bake in your oven for a little longer. Try 40 minutes? Or you could simmer the rice for a little bit longer at step 4). All ovens vary with cooking time so sometimes you need to adjust recipes to suit. I wouldn't cover the recipe though as I find the cheese needs to bake in an open oven without a cover. Thanks again and I'm looking forward to hearing how you get on with the sausage and pasta!

      Forgot to rate... sorry.... use this one ! So pleased I found this site! looking to restart my diet without going on a diet and you've done all the hard work for me. This is all so simple, realistic, achievable and totally yummy looking. I can slowly go back to a fish only diet using your recipes. Already ditched beef, lamb and pork. Theres so many ideas to run with here. I will totally share this with all my friends.
      By the way, have you tried Wolds way walk, cleveland walk and lyke wake? All beautiful ! Only done Lyke wake in full but small parts of the others. 🙂 Lovely. Thank you for your hard work on this site.
